  • Good pork will have lean meat that is bright red and fresh, with a layer of fat that is opaque white and translucent, the cut surface of the meat is dry, and pressing on the meat feels firm and elastic.
  • You should buy meat that has the lean and fat parts distinct but tightly attached to each other, and when touched, feels hard to separate.
  • Do not choose meat that has an unusual smell, a fishy smell, or a spoiled smell as it indicates the meat is bad and not stored under appropriate conditions.

How to prepare Salt and Chili Fried Pork

  • Marinate the meat

    Wash the pork with salt and then rinse again with clean water, then cut into pieces about 1cm thick. Marinate the meat with 1 spoon of pepper, 1 teaspoon of salt, 1 tablespoon of soy sauce, and 1 tablespoon of minced garlic.

    Mix well so that the ingredients and spices blend together, marinate for 1 hour.

    Tips for cleaning pork without odor:

    • Rub the meat with salt (or lemon juice, vinegar) for about 2 – 3 minutes, then rinse under running water until clean.
    • Boil a pot of water and blanch the meat for about 2 minutes, then take it out and wash away all the dirt so it can be processed.
    • Another handy tip is to soak the meat in a little diluted white wine for about 5 – 10 minutes, then take it out and rinse with clean water.

  • Fry the meat

    Mix 100g of flour with 100g of cornstarch evenly. Then, coat each marinated piece of meat with the mixture.

    Heat a pan on the stove, add 4 tablespoons of cooking oil, wait for the oil to heat up and become hot, then add the marinated meat to fry over medium heat until the meat turns light golden, then remove it to let it rest for about 2 minutes before frying again until it achieves a beautiful golden color (this way, the meat will not be dry and the coating will not burn).
