How to Choose Fresh and Delicious Pork
- A good piece of pork will have a light pink or pale red color, the fat will be creamy white and have the characteristic aroma of meat.
- You should choose pieces of pork that are elastic, firm, not too soft or too hard, and have no slimy liquid oozing out.
- Absolutely do not buy pieces of pork that have a fishy smell, show signs of bruising or have small white spots like rice grains, as these are signs of diseased pork.

Prepare the pork
Wash the pork with diluted salt water, then cut into pieces about 3 finger lengths and let it drain.
Tips to eliminate the smell of pork:
- Method 1: Add a crushed shallot to the water used to boil the pork; the shallot will help eliminate the smell of the meat very well.
- Method 2: Add a little white wine to the boiling water before taking the pork out.

Marinate and wrap the pork
Wash the banana leaves, turn the inside of the leaves out, place the pork on top, and season with 1/2 tablespoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 teaspoon of ground pepper, 2 crushed lemongrass stalks, 1 crushed ginger root, and mix well with 10 chopped green onions.
Next, wrap the banana leaves tightly around the pork, and add another layer of aluminum foil for security.
Little tip: To ensure the pork is delicious, you should wrap the aluminum foil very tightly without tearing it! -
Steaming with salt
Add salt to the pan and place it on the stove to roast over low heat for about 5 minutes until dry.
Prepare a large pot, add a portion of dry roasted salt to the bottom of the pot, then place the wrapped pork in the middle, covering it with more salt.
Cover the lid and cook on low heat for about 40 minutes to complete!
