Ingredients for Stir-fried Clams with Onions Serves 3 people

Clam meat 300 gr Onion 1 bulb Lemongrass 4 stalks Garlic 1 bulb Chili 2 fruits Green onion 1 stalk Cilantro a little Cooking oil 1 tablespoon Common spices a little (salt/ sugar/ seasoning/ monosodium glutamate/ pepper)

How to choose fresh ingredients

How to choose fresh, sweet clams

  • You should choose those that are slightly open, and when you touch them, they slowly close their shells, indicating that they are still fresh.
  • Do not choose clams that are too large or too fatty, nor those that are too small; choose those that are of moderate size for the best taste.
  • For clams that have already been shucked, you should choose those that are still warm or hot, indicating they have just been harvested.
  • Clams should have a fragrant smell, with white, plump meat that is of moderate size.
  • Note that whether buying fresh clams or shucked ones, do not choose clams that have an unusual foul smell.

How to choose fresh onions

  • You should choose onions with thin, shiny skin, uniform color, and feel dry and firm when touched.
  • Prefer those with long roots and skin that is tightly attached to the onion because these are fresh onions.
  • Avoid buying those that have sprouted, feel soft to the touch, or have uneven color as these are no longer fresh and may taste bitter when eaten.

How to Cook Stir-Fried Clams with Onions

  • Prepare the clams and ingredients

    The clams you buy should be pre-shelled for easier cooking.

    You boil a pot of water, then briefly blanch the clam meat for about 2 – 3 minutes to clean off any dirt, then remove and let it drain.

    You peel the lemongrass, wash it clean, and chop it finely. Peel the garlic and chop it finely along with the chili.

    You peel the onion, wash it clean, and cut it into wedges. Chop the green onion and coriander finely.

  • Marinate the clams

    You place the clams in a bowl to marinate with 1/2 of the chopped lemongrass, 1/2 of the chopped garlic, 1 chopped chili, 1/2 teaspoon of salt, 1 tablespoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, a little pepper, and mix well.

    Marinate for about 15 minutes for the clams to absorb the seasoning.

  • Stir-fried clams with onions

    Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add the remaining lemongrass, garlic, and chili to sauté until fragrant and golden.

    Next, add the clams and sliced onions and stir-fry for another 2 minutes, seasoning with 1 teaspoon of fish sauce, 1 teaspoon of sugar, and stir-fry evenly for about 5 minutes.

    Finally, adjust the seasoning to your family’s taste, add some scallions and cilantro, then turn off the heat.

  • Roasted peanuts

    Add 50g of peanuts to the pan with 1 teaspoon of salt and roast over low heat for about 10 minutes until the peanuts are fragrant, golden brown, and the shells crack, indicating they are done.

    Let them cool, remove the peanut shells, and then crush the peanuts lightly.

    You serve the stir-fried clams with onions on a plate, sprinkle some roasted peanuts on top, and you can enjoy it!
