  • Additionally, fresh squid should feel firm and elastic when pressed. The squid’s eyes should be clear, not bulging out, with the pupil clearly visible, and the body of the squid and its tentacles should be firmly attached.
  • Do not buy squid that is dull in color, soft and mushy, with tentacles and body easily separating, cloudy eyes, and leaking fluid as it indicates the squid is spoiled and not tasty.

  • Delicious Chinese flower buds will have a bright green color, be dry, and when smelled, you will feel the characteristic fragrant aroma of the flowers.
  • Avoid buying buds that are bruised, crushed, bloomed too large, have strange white spots, or are wilted, as these are old flower buds that are about to spoil.

How to prepare stir-fried squid with Chinese flower buds

  • Prepare the squid

    After purchasing, remove the squid’s ink sac, remove the eyes from the head of the squid, and discard the innards. To eliminate the fishy smell of the squid, rub the squid directly with 1 tablespoon of salt, then rinse it clean with water and let it drain.

    Once cleaned, cut the squid into bite-sized pieces with a thickness of about 1 finger.

    • Method 1: After cleaning the innards, soak the squid in water mixed with vinegar, lemon, or alcohol for about 10 minutes, then rinse with clean water.
    • Method 2: Alternatively, you can use pure rice vinegar to gently rub the squid piece, then rinse with clean water.

    Pick the flowers of morning glory, remove the ones that are rotten, then wash them 2 – 3 times until clean, and let them drain.

    Green onions and coriander should have the roots removed, then wash them clean with water, and cut them into bite-sized pieces about the length of a finger. Peel the garlic and shallots, then chop them finely.

  • Stir-fried squid with water lily flowers

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat over medium heat, when the oil is hot, add minced garlic and shallots and sauté until fragrant.

    When the garlic and shallots turn golden and aromatic, increase the heat, add the squid, and stir continuously for about 3 minutes until the squid firms up.

    Reduce the heat, season with 1/2 teaspoon of MSG, 1 teaspoon of oyster sauce, 1/2 teaspoon of ground pepper, and 1/2 tablespoon of seasoning powder.

    Continue to add the water lily flowers and stir for another 3 minutes until the flowers soften and turn dark green, then add chopped scallions and adjust the seasoning to taste before turning off the heat.
