Ingredients for Stir-fried Shiitake Mushroom with Lemongrass and Chili For 4 people

Fresh shiitake mushrooms 175 gr Lemongrass 6 stalks Chili 1 piece Green onions 2 stalks Soy sauce 3 tablespoons Vegetarian seasoning powder 1 teaspoon Chili sauce 1 tablespoon Salt/sugar a little

How to choose fresh and delicious shiitake mushrooms

  • Choose mushrooms with bright colors, a characteristic fragrance, and avoid selecting bruised mushrooms with a rotten smell. If the cut oozes a milky white substance, it indicates poisonous mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin, paper-like web on them.
  • Select mushrooms with firm stems, uniform colors, and if the mushrooms are opened, the gills on the cap should be evenly arranged, beautiful, and dry.
  • When choosing fresh shiitake mushrooms, select those with moderate caps, tightly closed, and slightly yellow-brown in color. If you see very dark brown mushrooms, do not buy them, as they may be poisonous.

How to Make Stir-fried Shiitake Mushrooms with Lemongrass and Chili

  • Prepare and Fry the Mushrooms

    Fresh shiitake mushrooms bought home, you use a knife to scrape clean the stems, then soak the mushrooms in diluted salt water for 15 minutes.

    Next, after soaking in salt water, you rinse them thoroughly with cold water, while rinsing, use your hands to gently squeeze the mushrooms to remove excess water and place them in a colander to drain.

    You heat a pan on the stove, add cooking oil and bring it to a boil, then add a smashed lemongrass stalk cut into pieces to sauté until fragrant, then add the prepared mushrooms and fry them until they turn golden, then remove them and let them drain on a sieve.

    Tip: Frying the mushrooms before stir-frying will help the mushrooms have a fragrant aroma and a chewier texture.

    Wash the lemongrass you bought, then use a knife to slice it thinly, and continue to finely chop the lemongrass.

    Tip:

    • You should buy fresh lemongrass and chop it yourself for better freshness and aroma.
    • When slicing lemongrass, the thinner you slice it, the easier and quicker it will be to chop it finely.

    Heat the oil in the pan to fry the mushrooms, then add the minced lemongrass and sauté until the lemongrass turns slightly golden, then turn off the heat and strain through a sieve to collect the sautéed lemongrass.

  • Make the stir-fry sauce

    You can utilize the pan that you sautéed the lemongrass in, add 1 tablespoon of cooking oil and 1 tablespoon of sautéed lemongrass, and bring it to a boil.

    Next, add the chopped scallion roots and sauté until fragrant over low heat.

    When the scallions are fragrant, turn off the heat, then add 3 tablespoons of soy sauce, 1/2 teaspoon of salt, 1/2 tablespoon of sugar, 1 teaspoon of vegetarian seasoning powder, 1 tablespoon of chili sauce, and 3 tablespoons of water to the pan, then turn the heat on and stir well over low heat until the seasonings dissolve completely.
