How to Choose Fresh Shrimp
- You should choose shrimp that have intact heads and bodies, plump, and feel firm to the touch.
- Shrimp should have a natural fishy smell. The color should be uniform and without any strange odor.
- Check the width between the joints of the shrimp. If the shrimp has narrow joints, it is fresh and good. If the joints are wide, it indicates that the shrimp is not fresh due to being stored too long or kept in the freezer for an extended period.
- You should also avoid buying shrimp that are slimy, as they may be sick or have been stored for too long.
How to choose delicious fresh squid
- To buy delicious fresh squid, you should observe the color of the squid. Choose squid that has a shiny color, with the brown part being dark and the body of the squid being opaque white like milk.
- You should choose squid that feels firm and has a high elasticity when you touch it.
- For fresh squid, the head and tentacles will be tightly connected. Avoid choosing squid with these parts being soft and easily separated.
How to prepare Stir-fried noodles with seafood and tamarind sauce

Boil the noodles
Add 1 liter of water to a pot. Place the pot on the stove, turn on medium heat to bring the water to a boil. Then add the noodles and boil with 1/2 teaspoon of salt for about 8 – 10 minutes until the noodles are cooked.
To make the noodles crispier, after boiling, you should take the noodles out, rinse them with cold water, and let them drain.
Tip: When boiling the noodles, you should add a little cooking oil so that the noodles are shiny and mix in some oil after boiling to prevent sticking. -
Prepare the seafood
Shrimp, after purchasing, peel the shell, remove the head and tail, and use a toothpick to remove the intestinal vein along the back of the shrimp.
Then, wash the shrimp thoroughly with water and drain, then cut the shrimp into pieces about the length of one finger.
To eliminate the fishy smell of squid, when preparing the squid, remove the internal organs, backbone, and squid teeth.
Next, soak in diluted salt water for about 3 – 5 minutes, then rinse with clean water and drain, using a knife to cut the squid into rings about 2 finger widths thick.
Tip:- After removing the intestinal vein from the shrimp, you can soak it in 200ml of white wine for about 30 – 40 minutes to clean and deodorize the shrimp.
- For squid, use a knife to make a longitudinal cut along the belly of the squid, then remove the transparent white backbone and scrape out the internal intestines of the squid.

Prepare other ingredients
Carrots, peel, wash thoroughly, drain, then cut into bite-sized cubes.
Shallots, peel and chop finely. Garlic, peel, crush, and chop finely. Green onions, cut off the roots, wash and chop.

Stir-fried noodles
Place a pan on the stove, turn on medium heat, then sauté minced garlic and shallots until fragrant.
Next, add carrots and stir-fry on high heat for about 5 minutes until the carrots are cooked, then add shrimp and squid, seasoning the mixture with 4 tablespoons of tamarind juice, 1.5 tablespoons of sugar, 1.5 tablespoons of fish sauce, and 1/2 teaspoon of chili powder, adjusting the seasoning to taste.
Then, add the noodles and stir-fry together with the mixture for about 5 minutes until the noodles absorb the flavors. Turn off the heat and scoop the noodles onto a plate.
