How to Choose Good, Fragrant Peanuts
- You should choose large, round peanuts; when pressing with your fingernail, the nut feels firm and plump, which indicates good quality, nutritious peanuts. The shell should be bright in color, uniform, without any shriveled or rotten nuts.
- You should not choose peanuts that are moldy or have unusual colors to ensure safety.

How to make Peanut (groundnut) sticky dough dessert
-
Roasting peanuts
You put 200g of peanuts on a pan and roast them over low heat, stirring regularly for about 15 minutes, until you smell the aroma and the peanut skins turn golden.
You pour the roasted peanuts into a basket to cool slightly, then peel off the skins.
Tips for roasting crispy peanuts:
- To roast crispy peanuts without burning them, you can add a little clean sand to roast along with them.
- Alternatively, you can also use an air fryer by soaking the peanuts for 20 minutes, then draining and rinsing them. You put them in the air fryer, then set the baking mode at 170 degrees Celsius for 10 minutes.
-
Mix the dough and shape the tapioca balls
Put the tapioca flour in a bowl, slowly pour in 150ml of boiling water a little at a time and carefully use a ladle to mix the flour evenly. Once the flour has combined with the water, use your hands to knead the dough into a smooth, pliable mass. Let the dough rest for about 10 minutes.
Put on gloves and dust your hands with a layer of flour to prevent the dough from sticking, take a small amount of dough, roll it into a ball, then flatten it, stuff it with peanuts, and pinch the dough to wrap the peanut, rolling it into a nice round shape.
-
Cook the syrup
Add 1 liter of coconut water along with 200ml of coconut milk to a pot, bring to a boil and then add 300g of sugar along with 1 vanilla pod for aroma, and add a little salt to enhance the flavor of the dessert. Taste and adjust the sweetness to your family’s preference!
Tip:
- You can add pandan leaves to give the dessert a more fragrant aroma.
- If you do not like coconut milk, you can omit it.
- If you do not have coconut water, you can substitute it with plain water, but coconut water gives a sweeter and better flavor to the dessert.
-
Cook the dessert
After the sugar syrup has dissolved, add sliced or julienned ginger, then add the cassava balls filled with peanuts and cook until the water boils and the balls rise to the surface, becoming slightly transparent, indicating they are cooked (about 15 minutes over medium heat).
