- To buy pork, you should choose pieces that have a balance of lean meat and fat, with a thick outer skin, fat about 2/3 of a finger’s length, and the lean meat tightly attached to the layer of fat.
- Additionally, fresh pork will have a dry outer membrane, light red or bright pink color. When cut, the piece of meat has a bright pink color, white-pink skin, and is tender. The fat interspersed with lean meat has a bright, firm color.
- To buy tender pork that is not too tough, you should not choose pieces with an outer layer of fat and skin that is too thick, as that indicates an older pig.
- Absolutely do not buy meat that has an unusual smell or leaves a fingerprint when pressed.

- Fresh chicken eggs usually have a dark brown shell, uniform color, no cracks, and no black spots. Older chicken eggs will have a pale shell and more black spots.

First, separate the yolks and whites of 2 eggs. Beat the 2 yolks, while you can keep the whites for another dish or utilize them in another recipe.
For the pork, to eliminate any unpleasant odor, soak the pork in a diluted saltwater solution for about 4 – 5 minutes, then rinse it with clean water and cut it into small, bite-sized pieces.
Next, add the pork, chopped green onions, 1 teaspoon of seasoning, 2/3 teaspoon of sugar, 1/5 teaspoon of pepper, 1/3 teaspoon of chili powder, 1 teaspoon of cooking oil, 1 teaspoon of egg yolk, and 2 teaspoons of flour into a meat grinder.
Grind the meat 2 – 4 times, each time for about 3 seconds until the meat is slightly minced and sticks together.
Note: To enhance the dish’s flavor, you shouldn’t grind the meat too finely. -
Soft Boiled Eggs
Boil 1.5 liters of water, wait for the water to reach a simmer, then add 1 tablespoon of salt and 1 tablespoon of vinegar, stirring until the salt is completely dissolved. Once the water is boiling, reduce the heat to low and add 6 eggs.
Stir gently, increase the heat to medium, and cook for about 6 minutes, then remove the eggs and place them in a bowl of ice water for about 20 – 30 minutes before peeling.

Wrap the meat and egg
Take the peeled egg and roll it evenly in flour to coat it completely.
Divide the meat into 6 equal parts, place 1 piece of meat onto the plastic wrap. Fold the plastic wrap over and use your hands to spread it evenly until the meat is thinly wrapped.
