Prepare the seafood
After purchasing squid tentacles, clean them, then use a knife to separate the squid tentacles.
To allow the shrimp to absorb the seasoning and prevent them from curling when stir-frying, rinse the shrimp briefly with water, peel off the shell, and then cut along the body.
Next, marinate the cleaned shrimp and squid with 1 teaspoon of seasoning powder and 1 teaspoon of white wine, 1/2 teaspoon of ground pepper, and then mix well, letting it sit for 5 minutes for the shrimp and squid to absorb the seasoning.
Then, place the non-stick pan on the stove, add 1 tablespoon of cooking oil. When the oil is hot, add all the marinated shrimp and squid and stir-fry for about 7 minutes on high heat, stirring continuously to prevent the seafood from releasing water.
After stir-frying, transfer the seafood to a plate to cool slightly.
Tip: Stir-frying the seafood beforehand will help the filling of the spring rolls cook evenly, and the cheese won’t melt when frying. -
Prepare other ingredients
For the crab stick, tear it into small bite-sized pieces.
After buying the cheese, cut it into long pieces about 5cm for easier wrapping.
Ripe mango, after peeling, cut it into pieces the same size as the cheese pieces.
Peel the onion, wash it clean, and then cut it into long strips the same length as the cheese.
Wash the mint and pick the leaves.
Crack the chicken eggs into a bowl and beat well. The eggs will be used to seal the edges of the spring rolls.
Tip: Mango will help balance the flavor of the cheese, making the dish more appealing. -
Spring roll wrapping
First, you fold the edges of the rice paper wrapper, then gradually add shrimp, squid tentacles, crab sticks, mango, onion, cheddar cheese, and Vietnamese herbs into the rice paper.
Next, you spread a little egg on the remaining part of the wrapper, then fold the two sides and roll it up so that the wrapper completely covers the filling, let it sit for 10 minutes to let the roll stick together, then fry.
Tip: You should roll the spring rolls to the same size so that they fry evenly and deliciously! -
Frying spring rolls
Place a pan or pot on the stove, fill the pan with oil; frying spring rolls will cook evenly and turn golden brown.
When the oil is hot, add the rolled spring rolls and fry over medium to low heat until they are golden brown on all sides, then remove and let them drain.
Tip: To avoid the cheese melting out and making the spring rolls unappetizing, just fry until the outer layer is golden brown and then take them out. -
Make the dipping sauce
You add 1 tablespoon of orange juice, 1/2 teaspoon of sugar, 1/4 teaspoon of salt, and 1/4 teaspoon of ground pepper into a bowl, then stir well for the ingredients to dissolve.
Then add 2 tablespoons of mayonnaise and 2 tablespoons of ketchup and continue to stir evenly.
-
Final product
The seafood spring rolls are delicious, crispy in the mouth with crunchy squid, flavorful shrimp, plus a salty and creamy cheese flavor. The dipping sauce is creamy and spicy, this is truly a perfect combination.

How to safely buy pork sausage
- To ensure safety, you should choose pre-packaged pork sausage that is sealed properly and carefully.
- If you choose pre-packaged pork sausage, you need to closely observe the information printed on the product packaging. A standard pork sausage package should have a clear brand name and production address. Additionally, you should pay attention to the ingredients of the pork sausage and the expiration date.
- Safe pork sausage must ensure it has no foul odor, is not leaking, is not torn, does not have openings or signs of being tampered with, altered, or patched.
How to choose fresh and delicious pork
- Fresh and delicious pork will have a bright color, with the meat being light pink or light red, and the fat being translucent white with a slight ivory tint.
- You should choose pieces of meat that have a dry surface, soft skin, with a distinct texture of meat and fat that are tightly attached to each other, and must have the characteristic smell of pork.
- When purchasing, you should press the meat with your hand to check. If you pull your hand back and the meat returns to its original shape without any indentation, then it is fresh meat.
- Absolutely do not buy if the meat has bruises, pale color, or is too dark, has a shiny surface, feels slightly slimy to the touch, and has a rotten smell.

How to choose fresh and delicious shrimp
- If buying frozen shrimp, you should choose shrimp that still have all their parts, the meat is elastic, naturally soft and chewy (to avoid buying shrimp that has been injected with gelatin to increase weight) and has no fishy or spoiled smell.
- Choose live shrimp, with shiny shells, looking firm and healthy; when you squeeze the shrimp, it should feel elastic, and the shell should not be too soft.
- A small tip: You should pay attention to how much ice the seller uses to preserve the product. If the shrimp are preserved with little ice but still look fresh and soft, it may have been preserved with borax. You should not buy shrimp like this as it is not safe for health.
Tips for successful preparation
- You should eat spring rolls right after they are freshly fried while they are hot and crispy. Letting them cool will make the spring rolls lose their crispiness, and the seafood inside can easily become fishy and unappetizing.
- You can prepare some cucumber, lettuce, herbs, and cilantro to enjoy with the spring rolls to prevent getting bored.
