How to choose fresh ingredients

How to choose fresh and delicious shrimp

  • Choose shrimp that have a hard and transparent shell, with a sea smell instead of the fishy smell of seafood, as these are fresh shrimp that have just been caught not long ago.
  • Pay attention to the tail of the shrimp; if the tail is curled together, it indicates fresh shrimp; conversely, if the tail is spread out, it may be shrimp that have been injected with chemicals or water to make them swell.
  • When you lift the shrimp, if the body bends back and you press it lightly, and a slimy liquid comes out, it means the shrimp is dead or has been frozen for a long time and is no longer fresh.

How to choose fresh and delicious meat

  • You should choose pork cuts that are bright pink in color, feel not too sticky when touched, and still have a certain degree of elasticity; this is fresh and delicious meat.
  • It is best to buy pork belly as it contains both meat and fat, preventing the dish from being too greasy due to excess fat or too dry from only using meat.
  • If possible, you should visit the meat stall early in the morning, as the meat is usually fresher. Avoid buying meat in the late afternoon or evening.
  • Do not buy meat that has a purplish color, shows bruises, and has an unusual odor; these are pieces of meat that have been stored for too long and are about to spoil, no longer fresh.
  • For shrimp and pork dumplings, after purchasing fresh meat, you need to finely chop it or use a meat grinder to grind it. Additionally, you can ask the seller to grind it directly at the stall, avoiding pre-ground meat that you cannot check the initial quality.

How to choose fresh and delicious tomatoes

  • Fresh and delicious tomatoes have bright red skin, uniform color, are plump, and juicy.
  • Choose tomatoes that still have their green stems firmly attached; these are tomatoes that have been picked when ripe on the vine, and the flesh will be red and tasty.
  • Do not choose tomatoes that show scratches on the surface, have rough skin, or even leak water. These are overripe tomatoes that should not be bought.

How to choose fresh and delicious onions

  • You should buy onions that have thin, shiny, and evenly colored outer skins; these are fresh onions suitable for cooking.
  • If the onions still have roots, choose those with many roots as they are usually fresh onions, and the roots have not fallen off like those that have been stored for a long time.
  • Do not buy onions that have started to sprout, as they can be harmful to health. Additionally, avoid buying onions that are uneven in color and feel soft in some spots while hard in others; these onions are often bitter and not tasty.

How to prepare Shrimp and Pork Siu Mai

  • Prepare the ingredients

300g of shrimp, wash it, then cut off the head and tail, peel off the shell, and remove the shrimp vein. Next, use a knife to crush the shrimp meat and cut it into small pieces.

Chop 6 stalks of green onions and 3 onions finely.

For 2 tomatoes, lightly score an X shape on the skin, then place them in boiling water for about 1 minute before peeling. Finally, put the tomatoes into a blender to puree.

Tip: To quickly extract the shrimp vein, flip the shrimp over, hold the shrimp body with one hand while peeling the sides of the shrimp head. Then, hold the connection between the head and body firmly and gradually pull the shrimp head away from the body. The shrimp vein will come out quickly with the head.
