How to prepare Shrimp and Pork Siu Mai

Prepare the ingredients
300g of shrimp, wash it, then cut off the head and tail, peel off the shell, and remove the shrimp vein. Next, use a knife to crush the shrimp meat and cut it into small pieces.
Chop 6 stalks of green onions and 3 onions finely.
For 2 tomatoes, lightly score an X shape on the skin, then place them in boiling water for about 1 minute before peeling. Finally, put the tomatoes into a blender to puree.
Tip: To quickly extract the shrimp vein, flip the shrimp over, hold the shrimp body with one hand while peeling the sides of the shrimp head. Then, hold the connection between the head and body firmly and gradually pull the shrimp head away from the body. The shrimp vein will come out quickly with the head.

Marinate the shrimp and meat
You put 0.5 kg of ground pork, shrimp, green onions, and onions that have been prepared into a bowl.
Next, you season with 2 tablespoons of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, and a little ground pepper, then use clean hands to mix all the ingredients thoroughly. Let it marinate for 15 minutes.

Form the balls
You use a teaspoon to take a portion of the shrimp and meat in your hand, then roll it into a ball.

Steam the meatballs
Turn on the stove to medium heat, add about 1 liter of water to a large pan so that it covers 1/2 of the pan.
When the water boils, place the shrimp in the steamer, put it into the pot, and then into the pan of water. Cover and steam for 15 minutes.

Making tomato sauce for xíu mại
To make the tomato sauce, add 1 tablespoon of cooking oil to the pan, then add garlic and sauté until fragrant.
Next, add the blended tomatoes, followed by the steaming water for the xíu mại along with 2 teaspoons of sugar, and 1/2 teaspoon of seasoning powder, then stir well.
Finally, add the steamed xíu mại, stir well, and cook on low heat for about 5 minutes, seasoning to taste before turning off the heat.
