How to choose delicious red dragon fruit
- You should choose rounder fruits as they tend to be fleshier and sweeter.
- It is best to buy dragon fruits with fresh skin, beautiful pink color, avoiding those that are bruised or have dark spots on the skin.
- Delicious dragon fruit usually has soft, flexible fins that are easy to bend, bright green color, and should not be shriveled or dry.
- When touching the skin of the dragon fruit, it should feel slightly soft.
- If it feels heavy and solid in hand, and you can smell a light fruity aroma, that indicates it is a good dragon fruit.

What is glutinous rice flour?
- Glutinous rice flour is a type of flour made from glutinous rice that is white in color and has a characteristic aroma of sticky rice.
- This flour is made from roasted glutinous rice that is then ground into a fine powder.
- Since it has been roasted, glutinous rice flour can be used directly to make cakes without needing to process it through heat (like steamed cakes).
- Another use of glutinous rice flour is to increase the stickiness and elasticity of cakes, jams, etc.
Notes when buying glutinous rice flour
- You can find glutinous rice flour at stores that sell baking ingredients or in supermarkets, reputable grocery stores.
- When choosing packaged products, you should check the expiration date carefully, ensure the outer packaging is intact, not torn or discolored, and the product inside has no mold, dark spots, or pests.
- If you cannot find glutinous rice flour, you can use roasted glutinous rice flour that has been roasted for about 2 – 3 minutes as a substitute.

How to Make Dragon Fruit Jam

Peeling the Dragon Fruit
To clean off any dirt, after purchasing, wash the dragon fruit thoroughly, cut it into 4 pieces, and then peel off the skin.

Blending and Marinating the Dragon Fruit
Put the flesh of the dragon fruit into a blender and blend until smooth.
Pour the dragon fruit mixture into a bowl, then add 300g of sugar. Cut a lemon in half, squeeze the juice, and add it to the dragon fruit mixture.
Stir well, then cover with plastic wrap and marinate the dragon fruit for about 2 hours for the sugar to dissolve completely and the ingredients to blend together.
Tip:
- Marinating the dragon fruit with lemon juice helps balance the flavor, and the resulting jam will have a moderate sweet and sour taste without being too sharp.
- Besides lemon, you can also substitute it with orange juice.

Cook dragon fruit
After marinating for enough time, add the marinated dragon fruit juice with sugar into the pan. Turn on the stove to high heat, stir well, and cook until the dragon fruit juice boils.
After the dragon fruit boils, reduce the heat and continue to cook until the dragon fruit juice evaporates, becomes thick, and darkens in color.
Tip: During cooking, you should stir continuously to prevent the dragon fruit jam at the bottom of the pan from burning.
Next, slowly add the glutinous rice flour into the pan, while adding it, stir well to dissolve the flour completely, then turn off the heat and continue stirring for another 3 – 5 minutes until the mixture cools down completely.
Tip:
- When adding glutinous rice flour to the pan, you should add it slowly while stirring well to prevent the flour from clumping and the final product will not be delicious.
- Adding glutinous rice flour to the jam will help the jam be chewier and more flavorful.

Shaping
Take the cooked dragon fruit jam and sun-dry it for about 1 day until the jam becomes thick, chewy, and can be rolled into balls.
Put on gloves, take a sufficient amount of jam into your palm and roll it into a ball.
Prepare plastic wrap for candy wrapping, place the dragon fruit jam ball in the center, then fold the wrap in half. Hold both ends of the wrap tightly and twist them in opposite directions.

How to preserve Tet jam
- You can preserve dragon fruit jam by putting it in a sealed jar and keeping it in a dry, cool place. This method will help your jam last longer, possibly up to 1 or 2 months.
- Each time you use it, you should only take out a sufficient amount to use on a plate, then tightly seal the bag again and continue to store it to avoid air entering and causing the jam to spoil quickly.
