How to choose fresh and delicious carp
- You should choose thick-bodied carp, with a balanced shape, shiny scales, bright and even colors, especially the flesh should be elastic.
- In addition, you should choose river carp instead of those raised in ponds, as the fish will be fresher and firmer.
- Avoid choosing fish with a swollen belly as it may contain a lot of fat and eggs; these fish are usually less sweet and not tasty.

How to prepare Fried Carp

Prepare the carp
After buying the carp, clean it and to eliminate the fishy smell, rinse the fish with diluted salt water and then wash it thoroughly with clean water.
Use a knife to fillet the fish and remove the bones, then cut the fish into thin slices about the thickness of a finger.
Marinate the fish with a little seasoning, ground pepper, and monosodium glutamate, then rub it evenly with your hands. To allow the fish to absorb the spices, marinate it for about 20 minutes.
How to clean fish without the fishy smell- Method 1: Soak the fish in salt water or rice washing water for about 15 minutes, then rinse with clean water and let it drain before cooking.
- Method 2: You can also soak the fish in a mixture of diluted lemon juice or vinegar for 5 minutes, then rinse with water.
- Method 3: To effectively reduce the fishy smell, after cleaning the fish, marinate it with diluted white wine for about 2 minutes, then remove and dry it before cooking.

Fry the fish
Add 150g of crispy flour into a bowl along with 1 egg yolk, and gradually add 150ml of filtered water.
Use chopsticks to stir well until the flour dissolves, avoiding lumps. Next, pour the breadcrumbs onto a plate and proceed to fry the fish.
Put a pan on the stove, add 250ml of cooking oil and heat it over high heat. While waiting for the oil to heat up, roll the fish in layers of crispy flour and breadcrumbs.

Making sweet and sour fish sauce
Place a pot on the stove, add 2 cups of water, 1 cup of sugar, 1 cup of fish sauce, sliced pineapple, 3 tablespoons of vinegar, and 1 teaspoon of salt.
Stir well with a spoon until the sugar dissolves and bring to a boil over medium heat for about 10 – 15 minutes.
After the fish sauce boils, turn off the heat, remove the pineapple, and let it cool. Next, finely chop the chili and garlic, then add them to the pot and stir well to finish.
