Prepare the pig ears
To remove dirt and odor, after purchasing the pig ears, scrape off the hair, then rub them with lemon and a little salt, and rinse with water.
Next, soak the pig ears in vinegar for about 5 – 7 minutes, then rinse well with water about 2 – 3 times, and let them drain.
Cut the pig ears in half horizontally to separate them into two parts: the crispy outer part on top and the meat of the pig ear below.
Keep the outer part intact. For the meat of the pig ear, use a knife to cut it into bite-sized pieces, then place them in a bowl with 1 tablespoon of seasoning and 1 tablespoon of ground pepper, mix well, and marinate for about 20 – 30 minutes for the meat to absorb the spices.
