Ingredients for Cheese Crepes For 4 people

How to Cook Cheese Crepes

Beat the eggs
First, beat 4 chicken eggs with 30gr of sugar.

Mixing crepe batter
Sift 100g of flour into a bowl of eggs and stir well to combine.
Next, add 300ml of unsweetened fresh milk and 20g of softened unsalted butter, and mix until the mixture is smooth.
Finally, strain the mixture through a sieve to remove any lumps, then place the batter in the refrigerator for 15 minutes.

Frying crepe shells
Spread a thin layer of oil on the pan, then pour a little batter into it and spread it thinly.
Fry the crepe on low heat until both sides are completely dry and cooked.
Tip: You should use less batter in the pan to make the crepe shell thin. The thinner the crepe shell, the more layers you can create when stacking the crepes, making them look more appealing when cut. -
Making cream cheese
Put 150g of cream cheese and 30g of sugar into a bowl, use a fork to mash it until the mixture is smooth.
Then, add 5g of melted gelatin and continue to mix well.
In a new bowl, add 300ml of fresh cream, use a mixer to whip the mixture until stiff peaks form.
Next, add the cream cheese mixture to the whipped cream and mix well to combine.

Spreading cream and decorating the cake
Spread cream on a piece of crepe, add a few slices of kiwi, then place another piece of cake on top. Repeat this layering until the remaining cakes are used up.
Finally, cover the cake with the remaining cream cheese, and put it in the refrigerator for 2 hours.
