- Avoid choosing lotus flowers that are still green or those that have fully bloomed, as immature flowers will taste bitter, while overripe flowers will be less sweet and aromatic.
How to prepare the Yellow Lotus Flowers

Prepare the yellow lotus flowers
Peel the yellow lotus flowers, discarding any that are bruised or wilted. Then wash the yellow lotus flowers 2 – 3 times with water to clean them, then drain in a basket.
Next, soak the yellow lotus flowers in rice water mixed with 1 tablespoon of salt for 30 minutes. While soaking, use a ladle to gently press the flowers down so they are submerged in the rice water.
After 30 minutes, use the ladle to mix the yellow lotus flowers from the top to the bottom and continue soaking for another 60 minutes for the flowers to absorb evenly.

Prepare a clean and dry jar. Gradually add 1/2 of the drained yellow flowers into the jar, followed by 1/2 of the sliced chili peppers. Continue adding the remaining 1/2 of the yellow flowers and chili peppers into the jar.
Pour the cooled vinegar and sugar mixture into the jar, using a small bowl to press down on top to ensure the liquid covers the flowers, then seal the jar tightly.
Let the pickled yellow flower vegetables soak for 24 hours before enjoying!
