How to choose fresh mangoes:
- You can check a good mango by pressing the stem and smelling it; if the stem has a fragrant smell, and the area right at the base of the stem is slightly indented with some essential oil, then it’s a fresh fruit without preservatives.

How to Make Fruit Cream Puff Cake

Make the Puff Pastry
Pour 130 ml of water into a pot, add 60 grams of unsalted butter, a pinch of salt, and 10 grams of sugar. Cook until the butter, sugar, and salt are completely dissolved.
Turn off the heat and add 80 grams of flour, stirring well, then use a whisk to mix thoroughly to combine the mixture.
Crack one egg into the flour mixture, stir well, then continue to add another egg and mix until the mixture is smooth and thick.
Transfer the mixture into a piping bag and prepare a baking tray lined with parchment paper. Use the piping bag to pipe the pastry mixture into round shapes on the parchment paper.
Place the shaped pastry into the oven and bake at 180 degrees for 20 minutes.
Note: You should preheat the oven for 5 – 10 minutes before placing the baking tray inside. -
Make the Cream Filling
Pour 230 ml of fresh milk into a pot, then add 15 grams of cornstarch while stirring (note that the heat is not turned on yet). After mixing well, add 40 grams of sugar and 20 grams of unsalted butter, then turn on the gas stove to low heat.
Stir the mixture well and add 3 drops of vanilla. Continue stirring until the mixture in the pot thickens, then turn off the heat.
Mix 2 egg yolks, add them to the mixture in the pot, and stir well. Transfer the finished cream into a piping bag and place it in the refrigerator for about 20 minutes.

Prepare the fruit
Peel the kiwi, cut into slices about 1 cm thick and then cut in half, peel the mango and cut into slices then into cubes, wash the strawberries and cut into thin slices about 0.3 cm.

Make the fruit cream puff
Cut the baked cream puff shell in half. Pipe the cream evenly in a circular shape along the edge of the shell, then arrange the fruit evenly on top of the cream. After arranging the fruit, place the remaining shell on top and you are done.
