Goat meat 500 gr Garlic 2 cloves Ginger 3 pieces Lemongrass 6 stalks Chili 3 pieces Herbs 10 gr Lime leaves 5 gr Culantro 10 gr Coriander 5 gr Fermented soybean paste 100 gr Lime 2 pieces (juice) Roasted sesame 100 gr (toasted sesame) Rice paper 100 gr Accompanying vegetables 100 gr (young fig leaves/green bananas/cucumbers/pennywort…)

How to choose fresh and delicious goat meat

  • Fresh and delicious goat meat has a red, shiny color, with even and firm fibers, feels smooth to the touch, has elasticity, and does not stick to the hand, with no strange smell.
  • Fresh goat meat will have a very strong characteristic odor, while processed goat meat will not have any smell or will smell different from fresh goat meat.

  • Prepare the goat meat

    Wash the goat meat thoroughly and leave it whole to drain.

    Tips to prepare goat meat without odor

    • Use white wine: After washing the goat meat, cut it into bite-sized pieces with a knife. Peel the ginger, wash it, then mince it finely, and mix it with white wine. Soak the goat meat in the white wine mixture for about 5 minutes, then rinse with cold water.
    • Use vinegar: Mix 15ml of rice vinegar with 1 liter of clean water, boil it on the stove. Boil the goat meat in this mixture until the water boils again, then take it out. At this point, the goat meat has significantly reduced its odor.

    1 knob of ginger, peeled, washed, and crushed.

    Lemongrass, remove the tough outer part, wash, crush, cut into pieces of 3 stalks, then chop finely and continue to crush.

    Pick the herbs, remove any spoiled leaves, and wash them thoroughly. Peel the garlic and mince it, and slice or mince the chili.

    The remaining 3 stalks of lemongrass are sliced thin, 2 knobs of ginger are sliced thin and then cut into small strips, lime leaves should be shredded, and other herbs should also be chopped finely.

    Green bananas are peeled and then soaked in a bowl of salted water mixed with vinegar for about 10 minutes.

  • Marinating and Steaming Goat Meat

    Put the goat meat into a large bowl to marinate with spices, then add the prepared lemongrass and ginger. Continue to add 2 teaspoons of seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and a little ground pepper to marinate the goat meat.

    If you have white wine, add 1/2 small cup to enhance the flavor.

    Then mix well or use your hands to massage the goat meat to absorb the spices evenly.

    After marinating the goat meat for 15 minutes, place it in a steaming pot for about 10 – 15 minutes until it’s just cooked; if steamed too long, the goat meat will become soft and won’t taste good when shredded.

    After steaming, take the goat meat out and slice it thinly.

    Next, add the lemongrass, ginger, garlic, chili, 2 tablespoons of lime juice, 1 teaspoon of sugar, 1/2 tablespoon of fish sauce, and a little pepper to the meat, then massage it well and let it sit for 5 – 7 minutes to absorb the spices.

    When the goat meat has absorbed the flavors, transfer it to a large bowl and mix it with herbs and chili, then add 1 tablespoon of sesame and mix well, and season again one last time.

  • Making dipping sauce for goat meat

    You add 2 teaspoons of monosodium glutamate, 1 teaspoon of sugar, ginger, and chili into a bowl of fermented soybean paste, then stir well to get the dipping sauce for goat meat.

    You just need to pick the mixed meat onto a plate, add some sesame and ground pepper on top, then decorate with accompanying vegetables to make a beautiful dish of delicious and attractive goat with lime, ready to serve as a snack.

    You can also enjoy it with rice paper, by wrapping the goat meat with vegetables, which is also very tasty.
