How to choose fresh and delicious shrimp
- You should choose fresh shrimp with a transparent shell that still has a slight smell of seawater, not a fishy odor. Do not buy shrimp with dark spots or inconsistent colors.
- Avoid buying slimy shrimp, those with curved bodies shaped like a circle, or shrimp that feel gritty when you move your finger on their shells.
- Fresh shrimp usually have tails that are close together. If the tails are splayed out, the shrimp may have been pumped with chemicals or injected with water to make them plump.
How to choose tapioca flour for making bánh canh
- You should choose tapioca flour that is opaque white like cassava.
- Avoid choosing overly white tapioca flour, as it may have been bleached, which is not good for health.

How to Prepare Pumpkin Noodle Soup

Prepare the pumpkin
Use a sharp peeler to remove the skin around the pumpkin and hold the pumpkin firmly with your other hand.
Next, use a knife to cut the pumpkin in half. Then continue to cut each half into 3 – 4 pieces depending on the size of the pumpkin.
Remove all the seeds and cut into slices about 0.5cm thick.
Next, use a spoon to scoop out the inside or gently use a knife to separate the flesh from the seeds.
Finally, just cut it into the desired size and prepare the dish.
Note:
If your peeler is not sharp enough or you don’t have a peeler, you can cut the pumpkin in half horizontally and then use a regular knife to peel the skin vertically.

Steam the pumpkin
Place all the prepared pumpkin in the steamer, turn on high heat to steam the pumpkin until soft.
Note: You should only steam the pumpkin, not boil it, because boiling will make the pumpkin mushy and will not retain much of its nutrients, as well as reduce its sweetness. -
Prepare and Marinate the Shrimp
When you buy the shrimp, peel off the head, the legs, and remove the black vein along the back, or you can peel the shrimp (if you prefer). Next, rinse them briefly in diluted salt water, then in clean water, and let them drain.
Marinate the shrimp in a bowl with 1 tablespoon of chopped green onion, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/3 teaspoon of pepper, and 1 teaspoon of fish sauce, mix well and marinate for about 10 – 15 minutes.
Tip for Quickly Removing the Black Vein on the Shrimp’s Back
- Count backward from the shrimp’s tail to the second groove connecting the two shell segments, poke a toothpick through this spot and gently pull the black vein out.
- You don’t need to cut the shrimp’s back; you can use a toothpick to dig out the head of the shrimp to find the black vein. Gently pull this black thread out, and the shrimp will be clean.

Kneading the dough
You put the steamed pumpkin into a bowl and use a spoon to mash it until smooth. Then, add 200g of tapioca flour, mix the mixture well, and proceed to knead the dough until it no longer sticks to your hands but is still soft.
Next, you put the dough into a clean plastic bag and cut a small corner to shape the dough.
Note: Depending on the moisture level of the pumpkin, you may adjust the amount of tapioca flour accordingly.

Boiling the pumpkin noodle strands
Place a pot of water on the stove and turn the heat to high. When the water boils, squeeze the plastic bag containing the dough to let the strands drop into the boiling water to create delicious pumpkin noodle strands.
When the noodle strands are formed and cooked, transfer them to a bowl of cold water and take them out before serving.

Prepare the broth
Place another pot of water on the stove and turn the heat to high. When the water boils, add all the marinated shrimp into the pot, stir well, and skim off some foam.
Next, add the boiled bánh canh noodles into the pot, stir well, and wait for it to boil, then season to taste with 1.5 teaspoons of salt, 3 tablespoons of seasoning powder, and 1 tablespoon of sugar.
Finally, add 4 tablespoons of fried garlic and turn off the heat.
Tip: You can cook the broth with pork bones to make it more delicious, sweet, and flavorful. -
