Peel the dragon fruit you bought, cut the dragon fruit into thin slices, and put it in a bowl to mix with sugar at a ratio of 1:0.3, meaning for every 1 kg of dragon fruit pulp, mix with 300 grams of sugar, then continue to add white alcohol.
Next, use your hands to mash the dragon fruit and sugar until the mixture is well combined. Note that you should use nylon gloves to ensure hygiene.

Fermenting Dragon Fruit Wine
After completing step 1, you put the dragon fruit mixed with sugar into the wine soaking jar. Leave this mixture for about 3 hours, when you see the sugar completely dissolved and the dragon fruit releasing its juice, then shake it well and cover it.
The fermentation time can take from 3 to 5 days; when you see bubbles rising to the surface, then the dragon fruit has fermented.
After the fermentation period, you can strain out some of the dragon fruit solids to extract the juice.
Tip:
- When fermenting dragon fruit, you should not cover the lid too tightly, avoid direct sunlight as it can spoil the fermentation process.
- During the fermentation process, if you see white cloudiness or mold on the surface, the wine may have gone bad.
