How to choose fresh ingredients
How to choose fresh mini chicken thigh mushrooms
- When buying mushrooms, you should choose mushrooms that have bright colors, not bruised or damaged. Avoid selecting mushrooms with very long stems as they tend to be spongy inside and lose their natural sweetness.
- Observe the mushroom cap, which should be plump, shiny, and smooth, without tears or wrinkles, indicating that the chicken thigh mushrooms are still fresh.
- High-quality chicken thigh mushrooms will have a natural, mild aroma. If the mushrooms smell pungent or sour, they may have rotted inside, and you should not buy them.
How to choose fresh bell peppers
- To select fresh bell peppers, you need to observe their outer skin. Choose peppers with taut, shiny skin, along with vibrant and consistent colors. Also, you should buy those with stems still attached as they indicate the peppers are still fresh.
- Good bell peppers are usually medium-sized, feel solid when held, and are heavy in weight.
- Avoid buying peppers that are soft, wrinkled, or have bruises, cracks, or missing stems.
How to choose fresh and delicious carrots
- When buying, if you see carrots with a bright orange color, and they feel heavy and firm, then these are good carrots. Choose those with smooth skins, without bumps or tiny dots.
- Choose carrots of moderate size. Avoid buying very large carrots as they often have more fibers and lack sweetness.
- Do not choose carrots with leaves, branches at the base, or a thick, large shoulder as these are usually carrots with large cores, which are not sweet to eat.
How to choose fresh and delicious chayote
- To buy good chayote, you should select those that are still fresh, with no bruises or insect damage on the skin.
- Choose chayote with fewer ridges for easier peeling. You can check the freshness and tenderness by gently pressing the skin with your fingernail. If the skin is easy to press, it is a young fruit.
- Avoid buying chayote that are bruised, have tiny spots on the skin, or have hard skins.
How to choose fresh and delicious green beans (string beans)
- You should choose green beans that are bright green, have a crisp texture, are easy to snap, and have medium-sized seeds, not too large or too small.
- Try snapping the ends of the green beans to check for tenderness. If the ends snap easily, it indicates that the beans are still young. Conversely, if they are tough to snap, the beans may be overripe.
- Avoid choosing beans that are too long, have shiny skins, few fine hairs, and distinct segments, as these are often treated with pesticides close to harvest time.
How to prepare Stir-fried Noodles with Mixed Vegetables
-
Prepare the ingredients
First, bring a pot of water to a boil and cook the noodles for about 5 – 10 minutes. Once the noodles are cooked, drain them.
Peel and wash the carrots and zucchini, then cut them into long strips about 5cm long.
Trim the ends of the green beans, remove the string on both sides, wash them, and cut them into pieces about 5cm long.
Remove the seeds from the bell pepper, then wash it and cut it into bite-sized pieces.
Remove any wilted leaves from the cabbage, then cut it into small bite-sized pieces. After cutting, soak the cabbage in salt water for about 10 minutes, then wash it and drain.
For the chicken thigh mushrooms, remove the stems, wash them, and cut them into thick strips. Cut the tomatoes into wedges.

Stir-fried vegetables
You place a pan on the stove, add a little cooking oil. Wait for the oil to heat up, then add chopped green onions to sauté until fragrant, and then add the prepared mushrooms and stir well.
Next, you add cabbage and green beans to stir-fry together. Finally, add carrots, chayote, and tomatoes and stir-fry over medium heat.
Then, you season the pan with 1 spoon of vegetarian oyster sauce, 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of honey, 1 teaspoon of soy sauce, and a little ground pepper. You can adjust the amount of seasoning to your taste.
