How to choose fresh chayote

  • When buying chayote, you should press it with your hand to determine if it is young or not. If it feels soft and easy to press, it is young; if it feels hard and slightly tough, then it is an old chayote. You should choose young chayote because old ones will be fibrous and hard to eat.
  • Additionally, a good chayote will have sting marks, a shiny and oily skin, many spines, be fresh, and not bruised.
  • For convenience in preparation, you should choose those with few grooves on the body.

How to choose fresh carrots

  • Fresh carrots will have a bright, deep orange color, and the green tops will be fresh and firmly attached to the body of the root.
  • When you press on the carrot, you will feel the body of the root is firm, not soft and mushy.
  • When buying, you should choose those that are of moderate size, elongated and tapered towards the end, with a smooth skin.
  • Avoid carrots with wilted tops, bruised bodies, slimy parts, or dark spots.

How to Cook Boiled Chayote

  • Prepare the Ingredients

    Put the chayote in a basin of water and use a peeler to remove the outer skin of the chayote, then cut the chayote in half, remove the seed, and only take the flesh of the chayote.

    Next, rinse the chayote with water and use a knife to cut it diagonally into small long pieces about 1/2 finger width. Do the same for the carrot.

    Tip:

    • Depending on your preference, you can boil the chayote with carrots to add more color, making the dish more visually appealing. If not, boiling just the chayote will still preserve the delicious taste of the dish.
    • To avoid chayote sap sticking to your hands, you should peel the chayote in water or wear gloves while peeling.
    • To ensure the chayote does not taste bitter, make sure to completely remove the skin from the chayote.

    Add 1/2 teaspoon of salt and 500ml of filtered water to the pot, cook and stir well on high heat for about 2 minutes until the water boils, then add the carrot to boil for about 2 minutes before adding the chayote, continue boiling on high heat for about 4 minutes until the chayote is cooked, then turn off the heat.

    Take the boiled chayote and carrot out and place them in a bowl of ice water that has been prepared, soak for 2 minutes to keep the chayote green and cool down faster.

    Finally, take the chayote out and arrange it on a plate, and the dish is complete.

How to choose fresh chayote shoots

  • You should choose chayote shoots that are about 20cm long because longer shoots usually come with long, tough stems, which are not edible.
  • Avoid buying chayote shoots that have been watered and are damp because the hot weather in Vietnam will make them less tasty by the time you get them home.
  • You should only wet the shoots for about 30 seconds before preparing and cooking them to keep them fresh.

    For the chayote shoots you bought, pick them from the top to the stem, taking only the tender parts, discard the tough stems, then rinse them twice with water and let them drain.

    Add 1/2 teaspoon of salt and 400ml of water into a pot, bring to a boil until the water is boiling and the salt is fully dissolved.

    Put the cleaned chayote shoots in. Boil and stir evenly for about 5 minutes until the chayote shoots are cooked, then turn off the heat, take them out onto a plate, and enjoy.
