Pork sausage (dồi lợn) is a rustic dish loved by many. Unlike the simple boiled sausage, today let’s get into the kitchen to cook the irresistible fried meat sausage!
Ingredients for Fried Meat Sausage For 4 – 5 people
Lean pork shoulder 200 grams Pork cartilage 200 grams Young pork intestines 1 kg Minced pork 200 grams Chopped green onions 10 grams Chopped bitter leaves 50 grams Basic seasoning to taste 10 grams
How to make Fried Meat Sausage

Prepare the meat
Wash the lean pork shoulder and pork cartilage clean, and chop them finely.
Put the lean pork into a blender and blend until smooth.
Next, blend the chopped pork cartilage until smooth.
Mix the ground lean pork, blended pork cartilage with 200 grams of minced pork. Then add the chopped bitter leaves, green onions, and minced shallots.
Season to taste: 1/4 tablespoon of seasoning powder, 1/4 tablespoon of pepper, 1/5 tablespoon of monosodium glutamate (MSG), 1/2 tablespoon of fish sauce.
Mix the above mixture well and marinate for 1 hour.

Stuff the Meat
Clean the pig intestines and let them dry.
Use a string to tightly tie one end of the intestines, the other end attached to the funnel mouth.
Stuff the meat into the intestines until they are full and taut.
Tip: It is advisable to cut the intestines into moderately long pieces of about 25-30 cm for easier stuffing. During the stuffing process, use a sharp toothpick to lightly poke the intestines to avoid air pockets and prevent bursting during frying or steaming, ensuring the meat filling is firm and even.

Steam the Sausage
Prepare a steaming pot of water, steam the sausage for about 30 minutes.

Fry the Sausage with an Air Fryer
Place the boiled sausages in the air fryer, set the air fryer to cook the sausages for 10 minutes at 175 degrees Celsius.
The sausages turn golden brown and a fragrant aroma spreads. Remove the sausages from the fryer and cut into small slices.
