  • You should choose young pigeons (the type of pigeon that has just hatched from 10 – 15 days). When buying, lift the pigeon’s wings, then press the body of the pigeon with your hand; if you feel thick meat, then it is a good young pigeon.
  • Another note is that when you press on the breast, if the meat in that area is soft, then it is a fresh pigeon.
  • If you buy pre-prepared pigeons, you should choose pieces of meat that look fresh, with skin that is pink and not pale, without bruises or strange odors.

How to choose good quality lotus seeds

  • You can buy freshly harvested lotus seeds with their shells still on and peel them yourself. This method may take a little time, but you will have fresh lotus seeds and be more assured when using them.
  • If you buy peeled fresh lotus seeds, you should choose those that are opaque white or deep yellow, small and uniform in size.
  • Fresh and good lotus seeds when cooked will have a characteristic aroma, especially when eaten they will not be raw.
  • You should avoid buying lotus seeds that have unusual colors or a musty smell as these may be old seeds or have been treated with chemicals.

  • Prepare the ingredients

    After buying the pigeon, you clean it and then briefly fry it.

    Next, soak 50g of lotus seeds in warm water for 3 hours so that the lotus seeds expand evenly and do not become hard.

    After peeling and cleaning the carrot, cut it into bite-sized pieces.

    Wash the red apple with water.

    First, you add the lotus seeds and the prepared carrots into boiling water for about 10 minutes until soft.

    Then, you place a pot on the stove and sauté minced garlic until fragrant. When the garlic turns golden, add 500ml of water, the prepared pigeon, 3 star anise, 1g of cinnamon, and simmer for 30 minutes.

    After 30 minutes, add the lotus seeds, boiled carrots, and 4 red apples into the pot, then season with 1 tablespoon of sugar, 1 tablespoon of soy sauce, 1/2 teaspoon of dark soy sauce, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, a little five-spice powder, then cover and continue to simmer for another 30 minutes.

    Finally, you just need to taste and adjust to your liking, then sprinkle a little ground pepper and turn off the heat.
