Peel the carrots, wash them clean, and cut them into thin strands, about 1/3 of a finger’s width.
Put the chayote into a bowl of water, cut it in half, peel it, and remove all the seeds. Then wash with clean water, and cut into strands about 1/3 of a finger’s width and 1/4 of a finger’s length.

- To avoid chayote sap sticking to your hands, you should peel chayote in water or wear gloves when peeling.

Peel and wash the shallots, then slice them thinly. Remove the roots from the green onions, wash them clean, and cut them into sections.

Making stir-fried chayote with carrots
Place a pan on the stove, add 1/2 tablespoon of cooking oil and sliced shallots to sauté until fragrant.

After about 3 – 5 minutes, open the lid and stir the chayote and carrots evenly. When stir-frying for 10 – 12 minutes, adjust the seasoning to taste, then add chopped scallions and a little ground pepper before turning off the heat!
