Chicken 500 gr Onion 1 bulb Lemongrass 1 stalk (chopped) Minced garlic 2 cloves Minced shallots 3 bulbs Green chili salt 1 teaspoon Oyster sauce 1 tablespoon Fish sauce 1/2 tablespoon Soy sauce 1/2 tablespoon Vinegar a little Common seasoning a little (sugar/ seasoning powder/ pepper)

  • Good chicken has a characteristic shiny yellow skin. The outer skin is thin, smooth to the touch, not too bumpy, and has good elasticity.
  • The inner chicken meat has a natural pinkish red color, not too pale or too dark. Especially, the chicken meat should not have bruises or clotted blood. Parts of the meat that are slightly pale or turning dark gray are from chickens that died before being processed.

  • Prepare the chicken

    Wash the chicken thoroughly, remove the smell with vinegar and salt, rinse with clean water, and let it drain.

    Cut the chicken into bite-sized pieces and place them in a large bowl.

    How to clean chicken meat, without odor: Before cooking, mix vinegar and salt in a ratio of 2 salt to 1 vinegar, then rub it all over the chicken, scrubbing multiple times and then rinse thoroughly with clean water, this way the chicken will not have an odor when cooked.

    For the onion, cut off the root, peel, wash thoroughly, and then cut into wedges. After that, soak the onion in a bowl of cold water.
