How to choose fresh and delicious frogs
- For frogs, you should prioritize buying live frogs, then process them, as the frog meat will be firmer and sweeter when cooked.
- If there are no live frogs, you can also choose pre-processed frogs at reputable supermarkets and stores to ensure quality!
- To choose delicious pre-processed frogs, you should select those with larger sizes and plump thighs. The meat should have a light pink color; when you press it lightly, it should feel firm and elastic.
- Avoid choosing frogs that have pale colors, a foul smell, or are slimy, as these indicate that the frog meat has been stored for too long, making it mushy and less tasty.
How to cook Singapore frog porridge

Prepare and marinate the frogs
After purchasing, the frog meat has been cleaned; to reduce the odor, we will soak the frog meat in diluted saltwater for about 5 minutes, then rinse thoroughly and let it drain.
Put the frog meat into a bowl, marinating it with a mixture of spices including: 1 tablespoon of seasoning, 1 tablespoon of cooking oil, 1/2 tablespoon of sugar, 2 tablespoons of dark soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of rice wine, and 1 teaspoon of ground pepper.
Use chopsticks to mix well and marinate for about 30 minutes so that the frog meat absorbs the spices evenly.

Cook porridge
Put 2 liters of filtered water into a pot and place it on the stove. Add 1 bowl of regular rice into the pot and cover it, cooking for about 15 minutes until the mixture boils.
At this point, reduce the heat and continue cooking for another 30 – 35 minutes until the rice is soft and mushy, and the white porridge is ready.
Tip: To cook faster, you can soak the rice for about 15 – 20 minutes to soften it! -
Cooking frog meat
Place a pot on the stove, turn on medium heat and add 1 tablespoon of cooking oil to the pot. When the oil is hot, gradually add chopped shallots, minced garlic, and 1/2 tablespoon of chili powder.
Sauté the shallots and garlic until fragrant, then add the marinated frog meat and stir-fry for about 5 – 7 minutes until the meat is firm. Next, add the marinade into the pot and cover to cook for another 5 minutes.
After 5 minutes, uncover and stir well, then add 2 tablespoons of cornstarch mixed with 1/2 cup of water (rice bowl).
Cover and continue cooking for another 3 – 5 minutes until the sauce thickens, then add whole chili peppers and chopped scallions and turn off the heat.

Completion
Scoop the cooked plain porridge into a bowl, sprinkle some chopped scallions on top to complete.
You can also prepare some grilled rice crackers to enjoy alongside if you like!
