- First, to choose fresh quail, you should prioritize selecting quails with light pink and bright skin.
- You should choose quail that has a dry meat surface; when pressed lightly, the meat should feel slightly sticky and have a bounce.
- Avoid selecting quail with bruises, dark spots, and a bad smell, as these are quails that have been stored for a long time, with mushy meat that will smell bad when cooked.
How to choose fresh, sweet mushrooms
- For porridge, you should first choose white oyster mushrooms because they are softer and sweeter than brown oyster mushrooms.
- You should choose mushrooms of medium size, with slightly opened caps, not torn, having a thin layer of fuzz, and a firm stem.
- Avoid selecting mushrooms with overly large caps, soft or mushy ones, as these are mushrooms that have been stored for a long time or are spoiled.

Prepare the quail
After purchasing the quail, wash it thoroughly with diluted salt water and then drain it in a basket. Next, use a flame to slightly brown the skin of the quail, then cut the quail into 4 pieces and place them on a plate.
Tips for cleaning quail properly and eliminating odors- Method 1: To effectively eliminate the odor of quail, you need to use tweezers to clean any remaining feathers on the quail, then wash it thoroughly with diluted salt water and let it drain.
- Method 2: Mix white alcohol with crushed ginger, rub it onto the quail, then wash it again with clean water and let it drain.

Prepare other ingredients
Use a knife to cut off the roots and yellow leaves of cilantro and green onion, then wash them thoroughly, chop them finely, and place them in a bowl.
For oyster mushrooms and chicken thigh mushrooms, first use a knife to cut off the stems, then soak them in diluted salt water for about 5 minutes, rinse them with clean water, then drain and cut into bite-sized pieces.

Cook quail porridge
Rinse 200g of sticky rice thoroughly, to make the rice soft and tender, add water a little more than the length of one finger and put it in the rice cooker. Turn on the Congee (or Porridge) mode and cook until the porridge switches to Warm mode, then it is done.
Place a pot on the stove over high heat, add 1 tablespoon of cooking oil. When the oil is hot, add minced onion and garlic and sauté for about 2 minutes until fragrant.
Next, add the quail and stir-fry with 1 teaspoon of seasoning, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of ground pepper for 5 minutes until the quail meat is firm.
Scoop the porridge from the rice cooker into a pot, add 2 liters of water and cook on high heat for 30 minutes until the quail is tender, then add chicken thigh mushrooms and oyster mushrooms.
Add 1 teaspoon of sugar, 5 teaspoons of seasoning, and 1/2 teaspoon of monosodium glutamate to the porridge and cook for another 10 minutes. Adjust the seasoning to taste, then turn off the heat, sprinkle chopped green onions, coriander, and a little ground pepper on top.
