How to choose fresh ingredients

How to choose fresh oysters

  • Oyster shell: You should choose oysters with a tightly closed apex and shell. This ensures that the oysters have plenty of meat and retain the seawater inside.
  • Oyster meat: When separating the shell, if the oyster meat clings tightly and fills the shell, containing plenty of seawater, then it is a good oyster.
  • Tap the oyster shell with your hand; if you do not hear any sound, the oyster has died and is no longer fresh.
  • Avoid buying oysters that you can easily separate the shell, as most of those are dead oysters. Do not choose oysters with eggs, as the meat will taste bitter and not delicious.
  • If buying shucked oysters, you should press on them to check if the oyster meat is still firm. It is best to buy those packed in vacuum-sealed bags, with a clearly labeled expiration date.

How to choose fresh, quality eggs

  • Choose eggs with a sturdy, glossy outer shell, attractive appearance, and no rough patches or tiny holes on the surface.
  • You can also gently shake the egg to check; if you hear liquid sloshing inside, do not buy it as it is a spoiled egg.
  • Avoid buying eggs with dark shells, heavily cracked, as they have been kept too long and are no longer usable.
