- Oyster shell: You should choose oysters with a tightly closed apex and shell. This ensures that the oysters have plenty of meat and retain the seawater inside.
- Oyster meat: When separating the shell, if the oyster meat clings tightly and fills the shell, containing plenty of seawater, then it is a good oyster.
- Tap the oyster shell with your hand; if you do not hear any sound, the oyster has died and is no longer fresh.
- Avoid buying oysters that you can easily separate the shell, as most of those are dead oysters. Do not choose oysters with eggs, as the meat will taste bitter and not delicious.
- If buying shucked oysters, you should press on them to check if the oyster meat is still firm. It is best to buy those packed in vacuum-sealed bags, with a clearly labeled expiration date.

Prepare the ingredients
You take the oysters, scrape out the meat, and then soak them in clean water for 5 – 7 minutes. After that, you take the oysters out and let them drain.
Wash the scallions and cut them into small pieces.

Mix the seasoning water
You put into a bowl 2 tablespoons of Kikkoman soy sauce, 2 tablespoons of fish sauce, 1 tablespoon of cooking wine, and stir well.

Beat the eggs

Frying Eggs with Oysters and Batter
