How to Make Egg Tofu

Mix the Egg Mixture
Crack 5 eggs one by one into a bowl through a strainer, using a whisk to beat the eggs. This method can make the egg mixture smoother. If you don’t have a strainer, you can put them directly into the bowl.
Then add 1/3 teaspoon of salt, 1/3 teaspoon of seasoning, and 1/3 teaspoon of soy sauce to the mixture. Finally, add the soy milk to the egg mixture and continue to mix until the ingredients are combined.

Pour into Mould
Pour the mixture into a bowl, mould or food container and cover tightly.
Tip: To achieve a smooth surface on the tofu when steaming, use a toothpick to poke holes in the tiny air bubbles that exist on the surface of the mixture. -
Steaming Tofu
Place the tofu in the steamer, steam when the water in the steamer is still cold so that the tofu can cook evenly.
Proceed to steam the tofu on low or medium heat for about 40 – 45 minutes.
After that, take the tofu out of the steamer and wait for it to cool down before removing it, doing this is both safe for you and helps the tofu not to break.
Tip for you- To check if the tofu is cooked, you can use a toothpick to pierce it. If the toothpick comes out clean, the tofu is done; otherwise, you need to steam it for an additional 3 – 5 minutes.
- Putting the tofu in to steam when the water in the pot is not boiling can help the tofu gradually release air bubbles, resulting in a smooth and beautiful finished product.

How to preserve egg tofu
- If you want the egg tofu to last longer, limit adding other ingredients like chili, onion… If combined, it should be used within the day to ensure the quality of the product.
- When you have leftover egg tofu, you can place it in a jar or food container and put it in the fridge’s cooling compartment of refrigerator. This method will help preserve the tofu for 4 – 6 days.
- If you want to use it for a longer time, add a little clean drinking water to the tofu container (enough water to submerge the surface of the tofu), then cover tightly and place it in the cooling compartment. The tofu can last for 7 – 10 days with this preservation method.
- However, you should only make a sufficient amount for use, and if it runs out, make more. Because the method is quite simple and tofu preserved for a long time will not taste as good as it initially did.
