- Choose sea snails that have a natural fishy smell that is not too strong, with intact shells that are not chipped.
- Do not choose sea snails that have a foul smell, with meat that shows signs of being soft and slimy.
How to choose fresh and delicious Vietnamese coriander
- Fresh and delicious Vietnamese coriander has a characteristic fragrant smell, small leaves, no black spots or wilting, and no strange odor.
- Do not choose Vietnamese coriander that lacks fragrance, has overly large and shiny leaves, as they will not be as tasty as the smaller leaves.
- Avoid selecting bundles of Vietnamese coriander that are wilted, have an unusual foul smell, or yellowing leaves, as these are spoiled and unusable.
How to prepare Garlic Fried Snails

Prepare the ingredients
After purchasing the snails, you place them in a bowl of water and add 1 sliced chili, then soak the snails for 30 – 45 minutes so they can expel all the dirt; then rinse them clean and let them drain.
Lemongrass, Vietnamese coriander, ginger, and garlic should be washed thoroughly and prepared as follows: crush the lemongrass, remove the wilted leaves from the Vietnamese coriander, slice the ginger, peel the garlic, and finely chop it.
Next, place the crushed lemongrass, Vietnamese coriander, and sliced ginger evenly at the bottom of the pot.
Then, add the cleaned snails along with 1/2 bowl of water, and 1 spoon of monosodium glutamate, then steam for about 15 – 20 minutes over medium heat until the snails are cooked, then remove them and let them drain.

Making stir-fried garlic sea snails
You put a pan on the stove and add 2 tablespoons of cooking oil, heating it over moderate heat until the oil is hot, then add minced garlic and stir-fry for about 5 minutes until fragrant and golden, then remove it.
In the same pan, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the steamed snails and stir-fry with 1 tablespoon of fish sauce, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1 tablespoon of chili sauce.
Stir well to ensure the snails absorb the seasoning, then taste and adjust to your liking. Finally, add the fried garlic and stir for about 1 minute before turning off the heat.
