How to choose fresh coconut snails
- Choose snails that are still alive; when you touch the mouth of the snail, the live and fresh ones will retract their shells and close their mouths. Snails that smell bad, have deeply retracted shells, and ooze slimy water are dead or stale.
- Look at the shell; snails with shells that are close to the outer edge are fat, plump ones, while skinny snails have shells that retract inward.
- Pay attention to the smell; fresh snails have a fishy and muddy smell but are not unpleasant, while dead snails have a very unpleasant smell, different from the muddy smell. Be careful to buy tasty snails.
- For coconut snails, choose slightly larger ones for better taste.
How to prepare steamed sipunculid snails with lemongrass

Prepare the sipunculid snails
To clean the snails from sand, you can soak them in diluted saltwater or a mixture of vinegar and chili for 20 minutes, then rinse them with water 2 – 3 times and let them drain.
How to clean sipunculid snails from sand:- You should soak the snails in a metal basin/bowl because the snails will expel all the dirt when they come into contact with metal. If you don’t have a metal basin/bowl, you can place a few metal utensils like a knife or fork into the basin and continue soaking the snails for about 1 – 2 hours.
- It is advisable to soak the snails in rice washing water so they can expel all the dirt quickly. If you don’t have rice washing water ready, you can soak them in cold water and add about 3 – 4 chili peppers for about 1 – 2 hours.
- You can also soak the snails in a mixture of lemon, vinegar, and chili. Just mix these ingredients together and soak the snails; they will expel the dirt very quickly for cooking.

Prepare other ingredients
Remove any spoiled leaves from the rice paddy herb and wash it clean, then let it drain.
Wash the lemongrass, then cut it into small pieces.

Steamed Snails
You put the snails in a pan with 2 liters of water, all the lemongrass, and cook until the snails boil vigorously. During the cooking process, make sure to stir the snails evenly to help them cook thoroughly and absorb the aromatic flavor of the lemongrass.
You season the snails with 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, or season to your family’s taste.
When the snails are cooked, you take them out into a clean basket and let them drain.
