How to choose fresh and delicious snails
- Touch the mouth of the snail with your hand; if the snail retracts inside, it is still fresh.
- Observe the mantle of the snail; if the mantle is thick and sits close to the mouth of the snail, it is plump, meaty, and will taste delicious when used.
- Dead snails will have a foul smell and exude a lot of slime; you should avoid buying snails with these signs.

Preliminary processing of snails
After purchasing, soak the snails in rice water with 1 chili for about 2 hours.
Then take the snails out and use a brush to clean off the mud and sand stuck to the snail shells, rinse with clean water 2 – 3 times, and let them drain.
How to clean bitter snails- Method 1: Soak the snails in rice water for about 2 hours to allow them to expel all the sand; the substances from the rice will help the snails release all the dirt, and you just need to rinse them clean afterward.
- Method 2: Soaking in water mixed with diluted lemon and salt for about 1 hour is also an effective way to clean the snails.

Boil the snails
Place a pot on the stove, set the heat to medium, add the snails and 100ml of water, and 3 crushed lemongrass stalks to boil. Cover and reduce the heat to simmer for 10 minutes until the snails open up, indicating they are cooked.
Remove the snails and discard the shells, then pour them into a bowl and rinse 2 – 3 times with water for cleanliness, then take them out into a basket to drain.

Stir-fried snails with garlic
Peel the garlic and mince it. Remove the old stems and damaged leaves from the Vietnamese coriander, wash it clean, and let it drain.
Heat a pan on medium heat, add 2 tablespoons of cooking oil, and when the oil is hot, sauté half of the minced garlic until fragrant.
When the garlic is golden and fragrant, add the snails to the pan, season with 1 tablespoon of sugar, 2 tablespoons of seasoning powder, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of pepper.
Stir-fry evenly for 10 minutes, adjust the seasoning to taste, add the Vietnamese coriander, and turn off the heat.

Prepare the dipping sauce
Add to a bowl 2 tablespoons of fish sauce, 2 tablespoons of water, 2 tablespoons of sugar, 1 teaspoon of monosodium glutamate, 1 minced chili, the remaining minced garlic, and 1 minced lemongrass stalk.
Mix well and squeeze the juice of 1 lime into it, taste and adjust the seasoning as needed.
