How to Make Fresh Orange Sponge Cake

  • Prepare the Oranges

    Use 2 oranges, wash them clean, peel them, and slice them about 1/2 finger thick, removing the seeds. The remaining orange should be cut in half to extract 70ml of orange juice.

    Add 30g of sugar, 1 tablespoon of water, and the sliced oranges into the pot, then place the pot on the stove. Once it boils, reduce the heat and simmer for an additional 3 minutes, then turn off the heat.

    Place the cooked oranges with sugar into the mold, arranging them around the bottom of the mold.

    Tip: Do not use the syrup that was cooked down; only use the cooked orange slices for a more delicious cake!

  • Whip the egg mixture

    Separate the egg yolks and egg whites into 2 different bowls. In the bowl of egg yolks, add 70ml of orange juice and 60ml of cooking oil.

    Use a whisk to mix well, add 5g of vanilla powder, 3g of baking powder, sift 100g of all-purpose flour and 20g of cornstarch into the mixture. Continue to use the whisk to mix until the batter thickens.

    Use a hand mixer to beat the egg whites until large bubbles form, then add 2ml of lemon juice and 100g of granulated sugar.

    Beat on low speed for 2 minutes, then increase the speed to high until the egg whites are soft and fluffy, when you lift the whisk, the peaks should be soft and droopy.

    • To successfully whip egg whites, divide the sugar into 2 or 3 portions and add slowly, avoiding adding all at once.
    • Egg whites should be at room temperature before whipping.
    • Use fresh eggs, and ensure there are no impurities such as yolks or fats, otherwise the egg whites will not whip.
    • Egg whites will whip faster if you can add vinegar or lemon juice, but be careful with the amount, otherwise the cake will change flavor. To be safe, you should use cream of tartar in the amount of 1/2 teaspoon.

  • Whisking the cake mixture

    Next, divide the whipped egg whites into 3 portions. Gradually add each portion to the cake batter bowl, using a spatula to gently fold the mixture from the bottom up.

    Bring the spatula down to the bottom of the bowl, push the heavier ingredients up and flip them to one side. Gently fold slowly until the mixture is well combined. Fold each portion of egg whites, do not dump all at once!

    Pour the cake batter mixture into the prepared mold with oranges. To burst the air bubbles on the surface of the batter, helping the cake to be smoother, gently tap the mold down on a flat surface.

  • Baking the cake

    To keep the oven temperature stable, preheat the oven at 180 degrees Celsius for 15 minutes.

    Place the cake mold in the oven and lower the temperature to 150 degrees Celsius, baking for 30 minutes, then increase to 170 degrees Celsius and bake for another 30 minutes until the cake is done.

    Once the cake is baked, crack the oven door open for 10 minutes. After 10 minutes, take the cake mold out to cool, then invert the cake onto a plate.

    Tip: If the cake sticks to the sides, use a knife to run around the edges and invert the cake onto a plate.

    Divide 120g of sugar into 3 parts, adding each part in and mixing at low speed for about 2 minutes until the sugar dissolves. After 2 minutes, increase the speed of the mixer to high and whip until the egg whites are soft and fluffy, when you lift the whisk, the peaks should stand but the tips should slightly bend down.
