Ingredients for Steamed Pumpkin Cake Serves 4 people

Pumpkin 100 grams Coconut milk 120 grams Sugar 50 grams Salt 1/4 teaspoon Glutinous rice flour 140 grams Wheat flour 20 grams (all-purpose flour) Tapioca flour 5 grams

How to Choose Fresh and Delicious Pumpkin

  • You should choose pumpkins with a stem length of at least 2cm, as those with long stems tend to spoil less quickly than short-stemmed ones.
  • Good pumpkins that are not spoiled have a smooth skin, without brown spots or blemishes.
  • After purchasing, place the pumpkin in a dry area to preserve it longer.

How to make Steamed Pumpkin Cake

  • Steam the pumpkin

    First, you need to peel the pumpkin and cut it into small pieces.

    Next, steam the pumpkin until you can gently press it with chopsticks or a fork and it feels soft.

  • Prepare coconut milk

    Pour 120g of coconut milk along with 60ml of water, 50g of sugar, and 1/4 teaspoon of salt into a pot. Then, turn on low heat and stir well until the mixture warms up and the sugar dissolves.

    Note: Do not let the mixture boil, just warm it up to easily dissolve the sugar and salt.

  • Mix the cake batter

    Prepare a large bowl, use a sieve to sift 140g of glutinous rice flour, 20g of wheat flour, and 5g of tapioca flour into the bowl.

    Then, mash the steamed pumpkin and add it to the flour mixture.

    Next, pour all the coconut milk mixture into the flour bowl. Then stir the batter until everything is combined into a thick and smooth mixture.

    Tip for mashing pumpkin: You can put the steamed pumpkin in a sieve and mash it so that it passes through the sieve, doing this will make the pumpkin smoother and finer than mashing it with a regular spoon.

  • Steam the cake

    When the dough is thick and smooth, pour it into a mold of your choice and steam it. Steam the dough tray in the steamer at high heat for 25 to 35 minutes.

    The steamed pumpkin cake, once completed, is cut open to reveal a very smooth and soft interior with a beautiful yellow color. When you eat it, you will taste the sweetness of the pumpkin combined with the rich and fragrant coconut milk. You can use this cake as a snack or to satisfy hunger.
