How to make Chocolate Chip Muffins

Whisk eggs with other ingredients
First, add 70g of eggs into a bowl and use a whisk to mix the egg whites and yolks together.
Next, add 50g of sugar, 1g of salt, and 15g of honey into the bowl and continue whisking until all the ingredients are well combined.
Then, melt 70g of unsalted butter using a double boiler until completely melted, then add it to the egg mixture. Use a whisk to mix the mixture evenly. Add 70g of unsweetened fresh milk to the mixture and continue whisking until the mixture is blended and homogeneous.

Mix the flour
Sift into the egg mixture in turn 90g of flour type 8, 3g of baking powder, 30g of cocoa powder, and 20g of almond flour. Then, gently use a whisk to stir the flour mixture in one direction until the mixture is uniform, thick, and slightly viscous.
Next, add 70g of chocolate chips to the flour mixture and use a spatula to scrape the flour from the sides of the bowl, mixing everything evenly once again. Finally, place the batter into a piping bag to prepare for pouring into molds.

Pouring the batter
Line the cupcake paper in the cake mold to help shape the cake during baking. If you don’t have cupcake paper, you can spread a little butter around the baking mold to help the cake come out easier.
Slowly add the cake batter into 2/3 of the mold to leave some space for the cake to rise. Sprinkle the remaining 20g of chocolate chips on top of the cake.

Baking the cake
Preheat the oven to 170 degrees Celsius for 10 minutes to stabilize the heat in the oven. Then place the cake in the oven and bake at 160 degrees Celsius for 25 minutes.
Once the cake is done, take it out of the oven, place it on a rack, and let it cool.
Tip to fix temperature differences when baking: If your cake rises quickly while baking and then collapses and becomes dense when taken out of the oven, it may be due to baking temperature. Each oven has different temperature discrepancies due to many factors; if you notice that the top of your cake rises too much and cracks in the first 5 – 7 minutes, you need to reduce the temperature by 5 – 10 degrees and extend the baking time by 5 – 10 minutes. -
