Ingredients for Durian Sponge Cake Serves 3 people

Durian 200 gr Chicken eggs 5 eggs Cooking oil 35 ml Sweetened fresh milk 35 ml Baking powder 2 gr Sugar 80 gr Flour 50 gr Cornstarch 50 gr Salt 1 teaspoon

How to choose delicious durian without chemicals

  • Choose fruits that smell strong and spread over a wide area; these are delicious durians. In contrast, fruits with a light fragrance, non-specific scent, or that cannot be smelled from about 1 meter away may be durians that have been treated with chemicals.
  • When selecting, hold the durian and shake it lightly or use a tool (knife) to gently tap the durian shell; if you hear a “thud” sound, it indicates a good durian with firm flesh. If you hear a “clang” sound, it means the fruit is hollow, not firm, or has large seeds with little flesh.
  • Choose those with fresh stems, slightly green, and firm; when you press with a fingernail, you should see sap flowing out. Durians that have been soaked in chemicals will not have sap when pressed or the stems will be rotten, soft, and mushy.
  • Choose durians with a green or light yellow shell; if the shell has yellow powder sticking to your hand, this indicates the durian has been soaked in chemicals.
  • Observe the spikes and select fruits with slightly rounded, sparse spikes, indicating that the fruit is ripe. In contrast, chemically soaked durians will have sharp, dark spikes, but the base of the spikes shows signs of being blackened, bruised, and soft.

How to make Durian Sponge Cake

  • Mix the durian egg mixture

    Add the durian flesh, 40g sugar, 1 teaspoon of salt, 25ml fresh milk, 35ml cooking oil, and 5 egg yolks into a bowl, then use a hand mixer to mix the ingredients well.

    After that, sift the mixture 2-3 times to achieve a smooth, fine durian puree.

  • Mix the cake flour

    Sift 50g of wheat flour and 50g of cornstarch into the durian egg mixture and stir well to combine.

  • Whip the egg whites

    Put 5 egg whites into a large bowl and use a hand mixer to beat on low speed until the eggs form bubbles like soap.

    Divide 40g of sugar into 3 parts, gradually adding each part one at a time while continuing to beat until dissolved. Beat each part of sugar for about 30 seconds on low speed before adding the next part.

    When adding the last part of sugar to the egg whites, increase the mixer speed to high, beating the eggs until stiff peaks form, the mixture is glossy, and smooth. When you lift the whisk, a peak should stand upright.

    Note:
    • Divide the sugar into 2 or 3 parts and add gradually little by little. Avoid adding all at once.
    • Egg whites should be at room temperature before whipping.

  • Mix the cake batter with egg whites

    Add the whipped egg whites into the yolk mixture, then use a spatula to gently fold the mixture from the bottom up.

    Bring the spatula down to the bottom of the bowl, push the heavier ingredients up and fold them to the side. Continue this process until the mixture becomes smooth.

  • Pour into the mold and bake the cake

    Line the mold with parchment paper, pour the cake mixture into it. Place the cake mold in a water bath, filling the water up to 1/3 of the cake mold. Preheat the oven to 180 degrees Celsius for 5 minutes.

    Put the baking tray into the oven, reduce the temperature to 170 degrees Celsius, and bake the cake for 30 minutes.
