Ingredients for Green Tea Muffins Serves 6

How to make Green Tea Muffin
-
Mix the cream cheese mixture
Add 80g of butter and 50g of cream cheese into a bowl, use a whisk to lightly beat and mix well. Then, use a sieve to lightly sift 100g of granulated sugar into the whipped cream mixture. Use the whisk to stir until the sugar completely dissolves.
Gradually add 2 eggs and mix thoroughly so that both the egg whites and yolks blend into the butter cream mixture.
-
Mix the flour
Sift 10g of matcha powder and 10g of baking powder into the butter cream mixture using a sieve. Add 220g of flour to the butter cream mixture and mix well with a flat whisk.
Then pour in 80ml of fresh milk, mix until the flour is completely combined with the milk.
Finally, add 20g of dark chocolate chips and 30g of white chocolate chips and mix well.
Tip for mixing the flour evenly and smoothly:- Divide the flour and milk into 2 parts.
- First, add 110g of flour and 40ml of fresh milk to the butter cream mixture to mix, after this mixture is well blended and smooth, then add the remaining part and continue mixing.
-
Pour into the mold
Place the paper cups into the muffin tray, pouring the batter mixture slightly above the rim of the liners. Add the remaining 10g of dark chocolate chips on top of the muffins.
-
Bake the muffins
Place the muffin tray in the oven. Set the oven to 180 degrees Celsius and bake the muffins for about 20 – 23 minutes.
Tip: You can check if the muffins are done by inserting a toothpick into one. If it comes out clean, without crumbs or batter sticking to it, then the muffins are ready. -
Final Product
After the muffins are baked, take them out of the mold and let them cool, then you can enjoy them.
The muffins will have a beautiful matcha green color, with a fragrant, soft, and fluffy texture. When enjoyed, you will feel the light sweetness of the chocolate chips blending with the enticing aroma of matcha.
Tips for successful execution
- The cake batter needs to be mixed very well; the finer the batter and the fewer air bubbles, the softer and fluffier the cake will be.
- The measurement of each type of ingredient must ensure the highest accuracy for the cake to have the right flavor and deliciousness.
- It is advisable to use a sieve to lightly sift the powdered ingredients, which will help eliminate any clumps, ensuring the cake’s deliciousness.
