Ingredients for Matcha Scones For 4 people

All-purpose flour 260 gr (type 11 flour) Matcha powder 21 gr Unsalted butter 160 gr Eggs 1 egg Egg white 1 Baking powder 1 tablespoon (leavening agent) Whipping cream 120 ml White chocolate 80 gr Sugar 70 gr

Distinguishing Matcha Powder from Green Tea Powder

  • Matcha powder is a fine powder made from 100% young buds of the green tea plant. This powder is very different from green tea powder in terms of nutritional value and price, as green tea powder is made from only 30% young tea buds and the remaining 70% is young tea leaves.
  • Matcha powder has a bright green color and a sweet aftertaste with bitterness, unlike green tea powder which has a dark green color, may have a slight yellowish tint and has a bitter astringent taste.
  • You can buy matcha powder at baking ingredient stores, supermarkets, or on e-commerce websites.

How to make Matcha Scone

  • Mix the dry ingredients

    Add 260g of flour, 20g of matcha powder, 1 tablespoon of baking powder, and 70g of sugar into a bowl, then mix the ingredients well.

    Next, add 120g of cold unsalted butter and use a fork or a specialized tool to mash the butter.

  • Whisk the eggs and cream

    Add 1 egg and 120ml of whipping cream into a bowl and stir until the egg is dissolved.

    Next, gradually add the egg mixture into the bowl of flour and mix well for the dough to stick together.

    Use your hands to knead the dough until the ingredients are well combined, forming a homogeneous mass.

    Then, wrap the dough tightly and place it in the refrigerator for about 1 hour.

  • Shape and bake the cake

    First, preheat the oven at 175 degrees Celsius for 15 minutes to stabilize the temperature.

    Next, divide the dough into equal parts, each weighing 80 grams, then roll them into balls.

    Whisk 1 egg white and brush it evenly over each piece of dough, then bake for 20 – 22 minutes at 175 degrees Celsius.

  • Making matcha chocolate

    Put 80g of melted white chocolate in a bowl, add 1/4 teaspoon of matcha powder, then mix well until combined.

    Next, put the cream mixture into a piping bag.

  • Decoration

    Pipe the matcha chocolate onto the cake in the shape of a 5-petal flower, then place a cold block of unsalted butter (about 5g) on top to finish.
