Ingredients for Mango Pudding Serves 3 people

Gelatin 10 gr (for the milk pudding layer) Egg yolks 2 pieces Vanilla 1 teaspoon Unsweetened fresh milk – 1 pack Sugar 50 gr Whipping cream 100 ml Gelatin 3 gr (for the mango jelly layer) Mango 0.5 kg (remove the seed and peel) Concentrated passion fruit juice 1 tablespoon Yogurt 100 gr (unsweetened)

How to make Mango Pudding

  • Soak gelatin and separate egg yolks – Make milk pudding

    Soak 10g of gelatin in water, allowing the gelatin to expand. Break 2 eggs, separate them, taking only the yolks, and then add 1 teaspoon of vanilla.

    Boil 1 pack of unsweetened fresh milk (220ml), adding 50g of sugar and stirring well. When the milk starts to bubble, reduce the heat and add the egg yolks, then add a little gelatin and stir well.

    Turn off the heat, let it cool slightly, then add 100ml of fresh cream and stir well. After that, strain through a sieve and pour into a container. Place in the refrigerator for about 1 hour to firm the surface.

    Place 3g of gelatin in a bowl, add water, and put it in the microwave. Set the microwave to Medium power for 1 minute, then take it out and let it cool.

    Put 0.5kg of washed mango, pitted, peeled, and cut into small pieces into the blender.

    Add dissolved gelatin, 1 cup of yogurt (unsweetened), 1 tablespoon of concentrated passion fruit juice, and blend until smooth.

    Next, strain through a sieve, then pour the mango mixture into a milk pudding jar, and chill for at least 4 hours.
