  • Prepare the Mai fish

    The fish you bought, clean the scales, clean the insides, and then cut off the head.

    To eliminate the fishy smell, rub a little salt directly on the inside and outside of the fish, then rinse it with clean water and let it drain.

    • Method 1: You can remove the fishy smell by using rice water. After preparing the fish, soak it in rice water for about 15 – 20 minutes, then take it out, rinse it with clean water and let it drain.
    • Method 2: While washing the fish, add a few tablespoons of white wine or vinegar to the water, soak the fish for 5 minutes, then take it out, rinse it clean with water.

    The pickled vegetables should be rinsed with water, then squeezed dry and cut into bite-sized pieces about 2 finger joints long using a knife.

    The tomatoes should be washed clean and then cut into wedges. The herbs should be chopped into small pieces about 1/2 finger joint.

    The garlic and shallots should be peeled and minced. The ginger should be peeled and finely chopped.

    You add 1 tablespoon of oil into the pot and sauté ginger, garlic, and shallots until fragrant. Once aromatic, add tomatoes and stir-fry, adding a little sugar to enhance the color of the tomatoes.

    Next, add 50ml of filtered water into the pot and stir-fry the pickled vegetables until cooked. Season the pot with 1 teaspoon of monosodium glutamate and 1 teaspoon of seasoning powder, then stir well.

    After that, add 200ml of water into the pot. Wait for the water to boil again, then add the fish. Season the pot with 2 tablespoons of fish sauce and stir gently for the spices to dissolve.

    Finally, add the herbs, let the soup boil one more time, then turn off the heat and serve the soup in a bowl for decoration.
