Passion fruit 1 kg Sugar 250 gr Salt 1 tablespoon

How to choose fresh and delicious passion fruits

  • You should choose passion fruits that feel heavy in hand, and when shaken, you don’t hear any sound, as these are the ones with a lot of pulp and are ripe.
  • Avoid selecting fruits that have overly shiny skin and feel light in hand, as they may be unripe.

How to make Passion Fruit Peel Jam

  • Prepare the passion fruit

    Peel the passion fruit very thinly to get more pulp, then cut it in half to collect the seeds in a bowl, keeping the pulp.

    Separate the pulp from the passion fruit through a sieve to obtain about 20ml of passion fruit juice.

    • The remaining passion fruit pulp can be stored in the freezer for use in making beverages, baking,…
    • Choose fresh fruits to get more and easier pulp; dried fruits are harder to peel and yield less.

  • Cut into strips and boil the passion fruit

    Cut the passion fruit pulp into thin strips, about 1/4 of a finger’s thickness. Place into boiling water, add 1 tablespoon of salt, and boil on high heat until the mixture boils again, then turn off the heat and drain.

    Prepare a small bowl of ice water so that when you take the boiled passion fruit pulp out, you can put it in to cool and become crisper.

  • Cook passion fruit

    Place a pan on the stove and wait for it to heat up, add the boiled passion fruit pulp, 250g of sugar, then add 20ml of passion fruit juice and stir the mixture to dissolve all the ingredients, cooking on low heat to prevent the sugar from burning. Stir until the mixture thickens, then turn off the heat and transfer it to a plate.

    Tip: If you want the passion fruit to be dry and chewy, coated with a layer of sugar, continue to cook until the sugar crystallizes and dries out.
