How to make Shrimp paste for fruit

  • Fry onion, garlic, and chili

    You put the pan on the stove on medium heat, add 2 tablespoons of cooking oil, wait for the oil to heat up, then fry the sliced shallots and minced garlic until fragrant.

    When the shallots and minced garlic turn golden and fragrant, you will add the chili and stir-fry for about 2 minutes.

  • Prepare the ingredients

    For the shallots, peel off the outer skin, wash them clean, and then use a knife to chop them finely.

    Next, soak the tamarind in 5 tablespoons of hot water for about 10 minutes to extract the tamarind juice. You can keep the tamarind seeds for cooking if desired.

  • Stir-fry shrimp paste

    First, place a pan on the stove and add 2 tablespoons of cooking oil. Wait until the oil is hot, then add chopped shallots and sauté until fragrant.

    Next, reduce the heat and add 1 tablespoon of chili powder to the pan, stirring continuously. You can adjust the amount of chili to suit your preference.

    Then, add the shrimp paste to the pan and stir well until the ingredients are well combined, then pour the prepared tamarind water into the pan to stir-fry together.

    Add 1/2 tablespoon of sugar to the mixture, stirring well. You can adjust the sugar amount based on the shrimp paste flavor and your personal preference.

    Finally, gently stir-fry the mixture over medium heat until the shrimp paste thickens, reaches a certain consistency, and when using chopsticks, it doesn’t flow too much, then turn off the heat.
