Ingredients for Fermented Shrimp Paste For 6 people

Fresh shrimp 2 kg Garlic 12 cloves Chili 5 pieces Fish sauce 4 cups (rice bowl type) White wine a little Sugar 2 cups (rice bowl type)

How to choose good fresh shrimp

  • Choose shrimp that have a natural, uniform color, and no unusual odors.
  • The tail of the shrimp should be slightly curled, and when touched, it feels firm. If the tail is curled and soft, those are spoiled shrimp, which should not be purchased.
  • Avoid choosing shrimp that have overly tight backs, with the back segments stretched out, as these may have been treated with chemicals and are unsafe.

  • Choose small, soft shrimp to make the shrimp paste easier to soften and more delicious after soaking.
  • When washing the shrimp, be gentle, and remove any debris to avoid crushing them.
  • Use glass jars instead of plastic jars to ensure food safety, preventing chemicals from leaching into food after prolonged use, which can adversely affect health.
  • Adjust the amount of shrimp paste and sugar to suit your taste.

How to preserve shrimp paste

  • Store in a dry place, avoiding direct sunlight.
  • After use, remember to tightly close the jar. Additionally, you can also store shrimp paste in the refrigerator’s cooler compartment.
  • The shelf life of shrimp paste is 5 – 7 days at room temperature and about 1 month when stored in the refrigerator.
