How to choose good shrimp:
- When selecting shrimp, choose large-sized shrimp; they will taste better. The shrimp should have a shiny color and should not smell fishy.
- Pay close attention to the tail of the fresh shrimp; it should curl up. If the shrimp has been injected with chemicals, the tail will also curl up but will spread out like a fan, and when picked up, the shrimp will feel soft and have a white color.
- Observe the back; if it is swollen and fat, it is due to chemical injection making the shrimp full and heavy. The shell of the head of chemically injected shrimp will easily separate from the body.

Cook the fish sauce
First, place a pot on the stove. Add fish sauce and sugar over low heat, stirring well until the sugar completely dissolves. Then turn off the heat and let it cool completely.
