How to Cook Red Snapper Braised with Cherry Tomatoes

  • Prepare the red snapper

    To clean and remove the fishy smell, gut the fish to take out all the internal organs, wash and rub with salt for about 10 minutes, then rinse thoroughly with water.

    Then use a knife to cut the fish into 4 pieces horizontally.

    Wash the chili and cherry tomatoes, remove the stems.

    After washing the green onions, chop them finely, separating the white part from the green leaves.

    Peel the shallots and garlic, crush them, and then chop finely with a knife.

  • Marinate the fish

    Marinate the fish with 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1 teaspoon of granulated sugar, 3 teaspoons of fish sauce, and 2 teaspoons of coloring sauce.

    Mix well to allow the fish to absorb the seasoning evenly, then let it sit for about 20 – 30 minutes before cooking.

  • Stew the fish

    Place a stove on and heat up 2 tablespoons of pork fat (or cooking oil) in a pan, then add the chopped white onion, shallots, and garlic to sauté until fragrant.

    Once the onions are evenly golden, start adding the fish into the pan, gently flipping each piece of fish with chopsticks. When the fish surface firms up, add about 1 cup of water to the pan and simmer on low heat.

    Continue to flip the fish 1 – 2 times, then gradually add all the washed cherry tomatoes into the pan. Simmer for another 3 – 5 minutes until the fish is fully cooked.

    When the fish is cooked, add chili and green onions on top and you can turn off the heat.

    • You should stew the fish on low heat to prevent it from burning and to allow the seasoning to absorb evenly.
    • Avoid flipping the fish too many times as this can cause the fish to break apart; wait until the surface firms up before flipping.
