  • Observe the fish’s eyes to be clear, bright, not bulging out, and the gills are bright red, then you can choose to buy.
  • You should choose fish with scales tightly attached to the body, having a certain luster, not missing scales, the mouth of the fish tightly closed, and when you press the flesh of the fish, it should be elastic.

How to choose fresh and delicious pineapples

  • Choose pineapples that have a bright yellow color from the crown to the tail, which may have a few slightly green eyes; these are ripe fruits that will be sweet and tasty. Round, short pineapples will have more flesh compared to long ones.
  • Choose pineapples with large, sparse eyes, as this indicates the pineapple is mature and naturally ripe, without being soaked in chemicals.
  • You can try smelling the end of the fruit; if it has a fragrant smell, you should buy it. Additionally, avoid choosing fruits that have a slightly sour fermented smell, as those pineapples are overripe.

How to prepare Sour Soup with Carp

  • Prepare the carp

    After purchasing the carp, to clean and remove the fishy smell, scrape off the scales, cut the fins, tail, and gills, then use a knife to gut and remove the blood along the backbone of the fish.

    Soak the fish in diluted saltwater for about 5 minutes, then rinse with clean water. Use a knife to separate the head from the body, then cut the body into bite-sized pieces.

    • You can use a few crushed ginger slices in water and soak the fish for about 5 minutes; ginger effectively eliminates the fishy smell.
    • Soak the carp in diluted saltwater for about 5 – 10 minutes, and after rinsing, the fishy smell will disappear.
    • You can also use rice water, soak the fish for 10 – 15 minutes, then rinse with water to completely remove the inherent fishy smell.

    For pineapple, you can buy a whole pineapple and peel it, removing the eyes, or you can buy one that has already been peeled at the market or food stores.

    Cut the pineapple into bite-sized pieces and remove the core to make the pineapple softer when cooked.

    Here’s the simplest way to peel a pineapple:

    • First, cut the pineapple vertically from top to bottom into 4 equal parts.
    • Continue to slice along the length of the pineapple piece, stopping at the end of the fruit and cutting firmly to separate the flesh from the skin.
    • Avoid cutting too close to the skin to prevent leaving any eyes on the pineapple. Finally, cut into smaller pieces as needed.

    For the water spinach, use a knife to strip off the fibrous outer layer, then soak the water spinach in a bowl of diluted saltwater for about 5 minutes, rinse well with water, and drain.

    Use a knife to cut the water spinach diagonally into bite-sized pieces, about 1 – 2 finger lengths.

    How to prepare water spinach without itching:

    • First, wash the water spinach to remove dirt, then strip off the fibrous outer layer. After that, use a knife to cut off the belly part of the water spinach and discard it.
    • You should cut the water spinach into bite-sized pieces in a pointed shape. Next, mix 1 tablespoon of salt with the cut water spinach and let it sit for about 15 minutes.
    • Add cold water to the bowl of salted water spinach, rinse well, wear gloves, and gently squeeze to drain the water.
    • Finally, blanch in boiling water briefly before cooking.

    Tomatoes are washed clean and cut into wedges. Water spinach is picked for leaves and tender stems, then washed thoroughly with water and drained.

    Banana flower is bought and soaked in salt water for about 10 minutes, then rinsed well. Vietnamese coriander and sawtooth coriander are cleaned and then chopped finely.

    Dissolve 50g of sour tamarind with 100ml of boiling water, then crush to extract the juice.

  • Cook the soup

    Place a pot on the stove, add 2 liters of filtered water and the tamarind juice mixture and bring to a boil.

    While waiting for the water to boil, place a pan on the stove, add 50ml of cooking oil and heat it up, then drop the fish in and fry briefly over medium heat for about 3 – 5 minutes until the fish is golden on both sides.

    Note: Frying the fish before adding it to the broth helps eliminate the fishy smell and shortens cooking time without being fishy.

    Next, remove the fish from the pan and place it in the sour soup pot. Continue to cook until the fish is cooked through and the water is boiling again, then add the fragrant herbs and tomatoes to the pot and cook for about 5 minutes until evenly cooked.

    Then add 2 tablespoons of sugar, 1 teaspoon of salt, 2 tablespoons of fish sauce, 2 teaspoons of seasoning powder, stir well, and cook for another 5 minutes until the spices are completely dissolved.

    Finally, add the water spinach, cilantro, sawtooth coriander, banana flower, and water lily, wait for the sour soup to boil again, taste for seasoning, then turn off the heat.
