Prepare the Ingredients
Clean the oysters, drain them, then separate the oyster meat.
Wash the lemongrass and drain it, then chop it finely. Peel the ginger and slice it. Peel and mince the garlic.
Peel the shallots and slice them. Wash the Vietnamese mint, drain it, and then chop it finely. Peel the onion and cut it into rounds.

Make Thai sauce
You put 100 gr of lemongrass, 100 gr of shallots, 2 cloves of garlic, 1 piece of ginger, and 4 chili peppers into a blender and grind them finely, then transfer the mixture to a bowl.
If you don’t have a blender, you can use a mortar and pestle!
Add to the mixture 2 tablespoons of sugar, 2 tablespoons of fish sauce, 2 tablespoons of chili powder, 2 shallots, 2 tablespoons of lime juice, and 2 tablespoons of chili sauce, then stir well.

Make Thai oyster salad
You put a pot of water on the stove, wait for it to boil, add 3 slices of ginger, and briefly boil the oyster meat, then remove it and place it in a bowl.
