- Prioritize selecting starfruits that are just ripe with a uniform greenish-yellow color, attractive, meaning they are not too green or too ripe. Additionally, choose fruits that feel firm and heavy in hand.

How to make Starfruit Preserve

Prepare the starfruit
Cut off the ends and the edges of the starfruit. Next, slice the starfruit into medium-thick pieces so that they do not get mushy when cooked, then remove all the seeds.

Soak and blanch the starfruit
Dilute 50g of coarse salt with lime juice, then add the cut starfruit and soak for 1 – 2 hours. After the soaking time is sufficient, take the starfruit out and rinse it well with water several times and let it drain.
Boil a pot of water and blanch the starfruit for about 30 seconds. After that, take the starfruit out and rinse it again with cold water and let it drain.
Tip: After blanching the starfruit, if it is still sour, place it on a cutting board and gently press to let the sour juice out. -
Cooked starfruit jam
After the starfruit has drained, you put the starfruit into a pot and mix evenly with 150g of granulated sugar, then let the starfruit marinate for 3 – 5 hours for the sugar to dissolve.
You place the starfruit pot on the stove and cook the jam on low heat for 25 – 30 minutes. While cooking the jam, you use a spoon to stir gently so that the jam does not break.
You cook the jam until the sugar water is almost gone, then add 1 chopped ginger root to the jam pot and stir well so that the ginger infuses into the starfruit, then continue to cook for another 10 – 15 minutes, until the jam turns a brownish color and the sugar is completely gone, then turn off the heat, let it cool, and store it in the refrigerator refrigerator.
Tip: Depending on your preference, you can cook the jam for an additional 5 – 10 minutes if you want to eat it a bit drier. -
