- When buying tamarind, you should choose the type of fresh sour tamarind that is plump and meaty, avoid buying overripe tamarind as it will be mushy and not tasty.
- For sweetened tamarind, you can use ripe or green tamarind but it is better to choose green tamarind for better flavor.
- Buy fresh, firm, and evenly sized tamarind fruits, do not buy those that are shriveled, infested, as they will not taste good and are difficult to peel.
How to Make Sweet and Sour Tamarind

Prepare the Tamarind
Fresh tamarind should be washed thoroughly and then boil 1 liter of water, pour the boiling water over the tamarind and soak for about 5 minutes. Prepare one liter of water in a small basin and add half a cup of salt, then stir until the salt is completely dissolved.
Next, take the tamarind out, peel it, and soak the tamarind in the diluted saltwater mixture for 1 day to prevent the tamarind from browning and to help the tamarind soak better.
After 1 day, remove the tamarind and rinse it with cold water and let it drain.

Cook the syrup
Put half a liter of water and 400 grams of sugar along with 1/2 teaspoon of salt into a pot, stir well, and boil until the sugar dissolves.

Soak the tamarind
After draining, place the tamarind in a plastic or glass jar with a lid.
Next, pour the cooled syrup into the jar containing the tamarind, close the lid, and put it in the refrigerator; it can be used after 2 days.
Note:
- When arranging the tamarind in the jar, it should be upright with the stems facing up, filling the jar completely.
- When pouring the syrup into the jar, pour enough to cover the tamarind but do not fill the jar completely; leave about 1 cm from the top.
- The jar used for soaking the tamarind must be thoroughly cleaned and dried; otherwise, it can easily spoil the soaked tamarind.

How to Preserve Sweet and Sour Tamarind
- Sweet and sour tamarind can be stored in the refrigerator for several weeks without worrying about spoilage, however, you should also make just enough to eat, don’t let the dish sit too long.
- When you eat, take a little out, remember to use clean chopsticks or spoons to take the tamarind, to avoid spoiling the remaining tamarind in the jar. If the tamarind jar has a layer of film or a strange smell, you should not use it anymore.
