Use your hand to pull strongly on the skin starting from the frog’s head just cut off to remove the skin.
Remove the internal organs, spinal column, and blood vessels from the frog’s thighs.
Wash clean with diluted salt water, then rinse with clean water and cut the frog’s thighs for use.

Stir-frying the dish
Place a pan on the stove, add about 10ml of cooking oil (use the oil from frying the frogs earlier) and wait for the oil to heat up. Add minced garlic, finely chopped ginger, and thinly sliced pickled shallots to sauté until fragrant and golden.
