  • You should buy fresh frogs because frog meat needs to be cooked immediately after being processed to enjoy its fresh flavor. If left outside for too long, the frog meat will gradually lose its smell, including its original nutrients.
  • Good frogs are large, even-sized, and have a brownish-yellow skin.
  • Avoid buying frozen frogs or those that have been pre-processed.

How to make Sweet and Sour Frog Stir-Fry

  • Prepare and marinate the frog meat

    It is advisable to buy frogs of uniform size so that when cooked, the meat not only cooks evenly but also presents more beautifully. Use one hand to hold the frog and the other hand to hold a knife to cut off the head of the frog.

    Use your hand to pull strongly on the skin starting from the frog’s head just cut off to remove the skin.

    Remove the internal organs, spinal column, and blood vessels from the frog’s thighs.

    Wash clean with diluted salt water, then rinse with clean water and cut the frog’s thighs for use.

    • Method 1: Use alcohol and ginger to wash the frog, to kill bacteria and eliminate the fishy smell of the frog.
    • Method 2: Use vinegar and salt to wash the frog, which has a similar effect to method 1 but is less effective.

    Marinate the frog thighs with 1 teaspoon of seasoning, 1 teaspoon of ground white pepper, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of white wine. Mix well so that the frog meat is evenly seasoned.

  • Fry the frog meat

    Before frying the frog meat, coat it with a thin layer of flour to retain its sweetness. Heat a pan with oil, fill the pan halfway with oil, and wait for the oil to heat before adding the frog to fry until golden. Once the frog is golden brown, remove it and let it drain.

    While waiting for the frog meat to fry to a golden color, prepare the sweet and sour sauce for stir-frying the frog which includes: 1 teaspoon of seasoning, 1/2 teaspoon of sugar, 1 tablespoon of fermented rice vinegar, 1 tablespoon of soy sauce, 2 tablespoons of pickled shallot juice, 1 tablespoon of ketchup, and 2 tablespoons of chili sauce.

    Tip: Rice vinegar and pickled shallot juice will give the dish a refreshing sour taste, while ketchup and chili sauce will make the stir-fry sauce thicker and more appealing.

  • Stir-frying the dish

    Place a pan on the stove, add about 10ml of cooking oil (use the oil from frying the frogs earlier) and wait for the oil to heat up. Add minced garlic, finely chopped ginger, and thinly sliced pickled shallots to sauté until fragrant and golden.

    Next, add bell peppers and red onions, stir-frying for about 2 minutes. Finally, add the frog legs and sweet and sour sauce, and stir well.
